### Ingredients

- 1.2kg lamb shoulder, cut into large pieces
- 3 tbsp extra virgin olive oil
- 1 tbsp butter
- 2 onions, sliced
- 4 garlic cloves, minced
- 2 tsp ras el hanout
- 1 tsp ground ginger
- Pinch of saffron in warm water
- 400ml chicken stock
- 1 preserved lemon, rind sliced
- 100g green olives
- Fresh coriander and flat-leaf parsley

### Method

1. Heat olive oil and butter in a tagine or heavy pot. Brown lamb in batches. Remove.
2. Cook onions in the same fat 12 minutes until very soft.
3. Add garlic, ras el hanout, and ginger. Cook 2 minutes.
4. Return lamb. Add stock and saffron water. Season well.
5. Cover and cook on lowest heat 2.5 hours.
6. Add preserved lemon and olives. Cook 30 minutes uncovered to reduce sauce.
7. Finish with fresh herbs. Serve with couscous or flatbread.
