### Ingredients

- 400g waxy potatoes, cubed 2cm
- 1 medium cauliflower, cut into florets

- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp chilli powder
- 2cm ginger, grated
- 2 green chillies, slit
- 1/2 tsp garam masala
- Fresh coriander, lemon, salt

### Method

1. Parboil potatoes 5 minutes. Drain well.
2. Heat ghee in a wide pan over medium heat.
3. Add cumin and mustard seeds. Wait for them to pop.
4. Add ginger and green chilli. Cook 30 seconds.
5. Add turmeric, coriander, cumin, chilli powders. Stir 30 seconds.
6. Add potatoes. Toss to coat in spiced ghee.
7. Add cauliflower. Mix well.
8. Cover and cook 15 minutes on low heat, stirring once halfway.
9. Remove lid. Cook 3 more minutes to dry any steam.
10. Finish with garam masala, fresh coriander, and a squeeze of lemon.

Frequently Asked Questions

Why parboil the potatoes first?

Raw potatoes and cauliflower have different cooking times. Parboiling brings the potatoes part-way to done so both vegetables are ready at the same moment.

Can I add tomato to aloo gobi?

Adding tomato creates a different dish — a sauced version that is perfectly good but not the traditional sukha style. For the dry version, no tomato.

How to prevent the cauliflower from going mushy?
