# Beef Stew That Proves the Fat Is Everything

A proper beef stew is one of the clearest arguments for ancestral fats over seed oils. The rendered fat that forms the braising liquid — whether tallow, lard, or bone marrow — creates a collagen-rich, deeply flavoured base that vegetable oil simply cannot produce. This is a stew built on rendered beef fat from the start, which means every layer of flavour — the fond from browning, the vegetables softened in fat, the long braise — carries that depth through to the final bowl.

## Why Fat Quality Defines Beef Stew

Beef stew works by extracting collagen from tough cuts — chuck, shin, short rib — over several hours of low heat. The collagen converts to gelatin, which gives the sauce its body and glossy appearance. The fat in which you build the stew determines the flavour that carries all of this. Seed oils are neutral to the point of tastelessness. Rendered beef fat — tallow — has a subtle, clean beefy note that ties the entire dish together and reinforces the meat's own flavour rather than competing with it.

## Choosing the Right Cut

Chuck shoulder is the classic choice for beef stew — well-marbled, relatively inexpensive, and perfectly suited to a 2-3 hour braise. Shin is richer still, with more connective tissue and a deeper flavour, but takes longer to become tender. Short rib produces the most luxurious stew of all, with the bone contributing additional gelatin and flavour, but at a higher cost. All three work; choose based on budget and how long you want to cook.

### Ingredients

- 800g beef chuck, cut into 5cm pieces
- 3 tbsp beef tallow or lard
- 2 onions, roughly chopped
- 3 carrots, cut into chunks
- 3 celery stalks, cut into chunks
- 4 garlic cloves, crushed
- 2 tbsp tomato paste
- 250ml red wine
- 500ml beef stock
- 2 bay leaves
- Fresh thyme
- Salt and black pepper
- Optional: 300g potatoes, cut into chunks (add in last 45 minutes)

### Method

1. Pat the beef dry and season generously with salt and pepper. Heat 2 tbsp tallow in a heavy pot or Dutch oven over high heat.
2. Brown the beef in batches without crowding — 3-4 minutes per side until deeply coloured. Remove and set aside. Do not rush this step.
3. Reduce heat to medium. Add remaining tallow and cook onions, carrots, and celery for 8 minutes until softened.
4. Add garlic and tomato paste. Cook 2 minutes, stirring.
5. Pour in red wine and scrape up all the fond from the bottom of the pot. Simmer 3 minutes.
6. Return beef to the pot. Add stock, bay leaves, and thyme. The liquid should just cover the beef.
7. Bring to a simmer, cover, and cook on the lowest heat for 2 hours. Add potatoes if using and cook a further 45 minutes.
8. Remove the lid for the last 20 minutes to concentrate the sauce. Taste for seasoning.

## Building Flavour: The Fond

The fond — the dark brown deposits left in the pan after browning the beef — is not burnt. It is concentrated flavour, the result of the Maillard reaction between the beef's proteins and sugars and the hot tallow surface. Every cook who deglazes the pan and scrapes up the fond before adding liquid is capturing flavour that would otherwise be left behind. Do not skip this step. The wine or stock will dissolve it immediately.

## Slow Cooker Method

Brown the beef and build the base as above, then transfer everything to a slow cooker. Cook on low for 8-10 hours or high for 4-5 hours. The slow cooker method produces more tender meat but a thinner sauce — remove the lid for the last 30 minutes of cooking, or transfer the liquid to a saucepan and reduce separately before serving.

Frequently Asked Questions

Can I freeze beef stew?

Yes — beef stew freezes excellently for up to 3 months. The collagen from the long braise helps the stew hold its texture through freezing and reheating. Thaw overnight in the fridge and reheat gently.

Why is my stew sauce thin?

Either the cut was too lean (less collagen), the stew did not cook long enough, or too much liquid was used. Fix by removing the lid and simmering to reduce, or by mixing 1 tbsp flour with 2 tbsp cold water and stirring into the hot stew.

What wine to use?

Any dry red wine you would drink. Avoid cooking wine — it is salted and flavourless. A basic Cabernet Sauvignon or Merlot works well. The wine's acidity helps break down the connective tissue during the long braise.
