# Berbere Spiced Chicken in Niter Kibbeh — Ethiopian-Inspired

Niter kibbeh is the fat that makes Ethiopian cooking what it is — clarified butter spiced with cardamom, fenugreek, black cumin, korarima (Ethiopian cardamom), rue, and ginger during the clarification process, producing an aromatic golden fat that perfumes everything it touches. Chicken cooked in niter kibbeh with berbere spice — the hot, complex Ethiopian chilli blend — produces a dish of considerable depth that is achieved through fat quality and spice complexity rather than lengthy technique.

## Niter Kibbeh — Making It

Melt 250g unsalted butter over medium-low heat. Add 1 small onion (quartered), 4 garlic cloves (crushed), 2cm ginger (sliced), 6 cardamom pods (crushed), 1/2 tsp fenugreek seeds, 1/4 tsp dried turmeric, 2 cloves. Simmer on the lowest heat for 30-40 minutes — the spices infuse into the butter as the milk solids clarify. Strain through a fine cloth. The result is deeply aromatic, golden-orange, and keeps refrigerated for 2 months. Make a large batch.

## Berbere

Berbere is the hot spice blend that defines Ethiopian and Eritrean cooking. Its base is dried red chillies with cardamom, black cumin, fenugreek, ginger, coriander, bishop's weed (ajwain), rue, korarima, and cinnamon. Commercial berbere is available at Ethiopian grocery stores and online and is significantly better than homemade without access to all the specialty spices.

### Ingredients

- 1.5kg chicken pieces (thighs and drumsticks)
- 3 tbsp niter kibbeh
- 2 large onions, finely sliced
- 4 garlic cloves, minced
- 2 tbsp berbere spice blend
- 400g canned tomatoes
- 200ml chicken stock
- Salt
- Injera or rice to serve

### Method

1. Heat niter kibbeh in a large pot over medium heat.
2. Add onions. Cook slowly 20 minutes until very soft and golden.
3. Add garlic and berbere. Cook 3 minutes, stirring.
4. Add chicken pieces. Brown on all sides in the spiced onion mixture, 5 minutes.
5. Add canned tomatoes and stock. Season with salt.
6. Cover and simmer 30-35 minutes until chicken is cooked through and sauce is rich.
7. Taste and adjust seasoning. Serve with injera or rice.

## The Onion Foundation

Twenty minutes of slow-cooked onion is not optional in Ethiopian cooking — it is the flavour foundation of every stew (wot) in the tradition. The onions must be genuinely golden and sweet, not just softened. Ethiopian cooks often cook onions dry without any fat first, allowing them to dry out and concentrate before adding the niter kibbeh. Both methods produce excellent results.

Frequently Asked Questions

Can I use regular ghee instead of niter kibbeh?

Regular ghee lacks the spice infusion that makes niter kibbeh distinctive. The dish will be good but not authentically flavoured. The 30 minutes required to make niter kibbeh is worth it.

How hot is berbere?

Moderately hot — less than a Thai red curry, more than paprika. The heat level varies by brand and recipe. Start with 1 tablespoon and adjust upward.

What is injera?

Ethiopian and Eritrean sourdough flatbread made from teff flour, fermented for 2-3 days to develop its characteristic sour flavour. Available at Ethiopian restaurants and grocery stores.
