## How to Season Cast Iron with Tallow — Step by Step

Strip the factory seasoning: wash with soap and water, dry completely, place in a 250°C oven for 1 hour. Remove. While still hot, apply a thin layer of beef tallow with a cloth — thin is critical, too much produces a sticky, uneven coat. Wipe off the excess until the pan looks almost dry. Return to the oven upside down for 1 hour at 200°C. Cool in the oven. Repeat 3 times for the initial seasoning. After that, simply cooking in tallow, lard, or ghee continuously maintains and builds the seasoning.

Frequently Asked Questions

Can I use soap on cast iron?

A small amount of modern dish soap is fine — modern soap formulations are not as harsh as the lye-based soaps that stripped seasoning. What damages seasoning is soaking in water or putting in the dishwasher.

Why does food stick to my cast iron?
