Frying is where most kitchens still reach for canola or soybean oil. You don’t have to. Four fats cover nearly every frying job without seed oils: beef tallow, lard, ghee and avocado oil. Here is how they compare on smoke point and fat profile, with every number sourced, and which jar or bottle to buy for each.

## Quick answer

- **Deep frying (fries, fried chicken):** beef tallow, or lard for a milder flavour.
- **Neutral flavour, liquid at room temperature:** refined avocado oil.
- **Shallow frying, eggs, Indian dishes:** ghee.
- **Pastry-style frying (donuts, chin chin):** lard.

## Smoke point and fat profile compared

| Fat | Smoke point (typical) | Saturated | Monounsaturated | Polyunsaturated (linoleic) |
| ----------------------------- | --------------------------- | --------- | ---------------- | --------------------------- |
| Beef tallow | 230 °C / 446 °F \[1\] | 50% | 42% | 4% (3%) |
| Lard | 240 °C / 464 °F \[1\] | 39% | 45% | 11% (10%) |
| Ghee | about 250 °C / 482 °F \[2\] | 62% | 29% | 4% (2%) |
| Avocado oil (refined) | above 250 °C / 482 °F \[3\] | 12% | 71% | 14% (13%) |
| *For comparison: soybean oil* | — | 16% | 23% | 58% (51%) |

Smoke points: \[1\] ISEO (commercial, deodorized lard and tallow), \[2\] ghee review, \[3\] avocado oil study. Fatty-acid shares are USDA FoodData Central values per 100 g, rounded \[4–8\]. Home-rendered fats and unrefined oils usually smoke at lower temperatures, because smoke point falls as free fatty acids rise.

## Smoke point isn’t the whole story

A review of deep-frying chemistry lists the factors that speed up oil breakdown: high frying temperature, the number of times the oil is reused, free fatty acids, metals, and the share of unsaturated fatty acids \[9\]. That is why the fat profile matters as much as the smoke point. Soybean oil is about half linoleic acid \[8\]; tallow, lard and ghee are mostly saturated and monounsaturated fat; avocado oil is mostly monounsaturated oleic acid.

## Fat by fat

### Beef tallow

Firm at room temperature, savoury, and the classic fat for fries. Smoke point 230 °C / 446 °F for commercial tallow \[1\]. Try it in [tallow French fries](https://thefoodiekitchen.net/tallow-french-fries/) or [Southern fried chicken](https://thefoodiekitchen.net/tallow-fried-chicken-southern/). Brand guide: [Best Beef Tallow Brands](https://thefoodiekitchen.net/best-tallow-brands-review/).

### Lard

Milder than tallow, especially leaf lard, and the highest smoke point of the commercial animal fats in the ISEO chart: 240 °C / 464 °F \[1\]. It has more polyunsaturated fat than tallow (about 11%) \[4\]. See [What Is Lard?](https://thefoodiekitchen.net/what-is-lard/) and [Lard vs Tallow](https://thefoodiekitchen.net/lard-vs-tallow/).

### Ghee

Clarified butter with the milk solids removed, so it does not burn like butter; smoke point about 250 °C \[2\]. Best for shallow frying and sautéing; a full deep-fry pot of ghee is expensive. See [Ghee vs Butter](https://thefoodiekitchen.net/ghee-vs-butter/) and [Best Ghee Brands](https://thefoodiekitchen.net/best-ghee-brands-review/).

### Avocado oil

The neutral, pourable option, with a smoke point above 250 °C \[3\]. Buy carefully: in UC Davis testing, 15 of 22 avocado oils were oxidized before their expiry date and 6 were mixed with other oils, three of them almost entirely soybean oil. Chosen Foods was one of two brands whose refined oil tested pure and fresh \[10\]. See [Is Avocado Oil a Seed Oil?](https://thefoodiekitchen.net/is-avocado-oil-a-seed-oil/).

## How we chose

This is a desk-researched comparison, not a lab test. We shortlisted products with a current, verified Amazon listing and compared what can be checked: the ingredient list, what the maker states about sourcing and processing, the package, and how each fat fits the cooking jobs on this site. Sourcing and quality claims below are the manufacturers’ own unless a study is cited. We list no prices because they change daily.

Smoke points are typical lab values for the fat type, not for these exact jars, and vary with refining and freshness. Smoke point alone does not predict how a fat holds up to heat \[3\]. Sizes are as listed on Amazon. Affiliate links: as an Amazon Associate we earn from qualifying purchases.

## Frequently asked questions

### What is the best oil for frying without seed oils?

For deep frying, beef tallow and lard are the traditional choices: they are mostly saturated and monounsaturated fat, and commercial versions have smoke points of 230–240 °C (446–464 °F). Refined avocado oil is the best neutral liquid option. Ghee is excellent for shallow frying but costly for a full pot.

### Does smoke point matter most?

No. Smoke point tells you when a fat visibly breaks down, but oxidation during frying also depends on temperature, how many times the fat is reused, free fatty acids and how unsaturated the fat is (Choe and Min, 2007). Fats low in polyunsaturated fat, like tallow and ghee, tend to hold up better.

### Can I reuse tallow or lard after frying?

You can strain and reuse it, but each use lowers its stability. Discard it when it smells off, darkens heavily, foams or smokes at normal frying temperature.

### Why is peanut oil not on this list?

Peanut oil is pressed from a seed (a legume), and this site sticks to fats that are not seed oils.

### Is all avocado oil pure?

No. A 2020 UC Davis study found 15 of 22 avocado oils oxidized before their expiry date and 6 mixed with other oils. Chosen Foods was one of two refined brands that tested pure and fresh.
