# Butter French Toast — Brioche in Brown Butter

French toast made with brown butter — beurre noisette — has a depth of flavour that plain melted butter cannot match. The milk solids in the butter caramelise as the bread hits the pan, and those caramelised compounds combine with the egg custard soaking the bread to produce something that tastes simultaneously of custard, caramel, and warm bread.

The bread matters. Brioche produces the richest result because its own butter and egg content complements the custard and brown butter. Day-old bread works best — slightly dried-out bread absorbs more custard than fresh bread.

### Ingredients

- 8 thick slices (2.5cm) day-old brioche or sourdough
- 3 large eggs
- 180ml (¾ cup) whole milk
- 1 tsp pure vanilla extract
- ½ tsp ground cinnamon
- 2 tbsp grass-fed butter per batch (total 4 tbsp)
- To serve: pure maple syrup, fresh berries, extra butter

### Method

1. Whisk together the eggs, milk, vanilla, and cinnamon until smooth.
2. Heat 2 tbsp butter in a large skillet over medium heat until the foam subsides and the milk solids begin to turn golden — this is the brown butter stage. The pan should smell nutty.
3. Working quickly, dip each slice of bread into the egg custard for 30 seconds on each side, allowing it to absorb thoroughly.
4. Add the soaked bread to the browned butter. Cook for 2-3 minutes per side until deeply golden on both sides.
5. The outside should be caramelised and crispy at the edges; the inside should be custardy and just set.
6. Serve immediately with maple syrup, fresh berries, and an extra knob of butter.

Frequently Asked Questions

Is French toast seed oil free?

Yes. Brown butter is the only fat. Check any commercial maple syrup — pure maple syrup contains no seed oils; pancake syrup (corn syrup based) sometimes uses emulsifiers.

Why brown the butter?

The caramelised milk solids from browning add flavour complexity that plain melted butter cannot produce. The Maillard reaction starts in the butter, continues when the egg-soaked bread hits the pan.

Can I use regular bread?

Yes — any thick-sliced bread works. Brioche is richest, sourdough adds tang, white sandwich bread works but produces less flavour.
