Chicken pot pie is arguably the most comforting dish in the American repertoire. A creamy butter-and-stock filling loaded with chicken and vegetables, sealed under a flaky lard crust and baked until golden. Pre-made pot pies use vegetable shortening for the crust and often canola oil in the filling. This version uses butter for the filling and lard for the crust — producing a better dish in every measurable way.

The lard crust on a savoury pie works exactly as it does on a sweet one: it shatters at the fork and has a neutral flavour that lets the filling dominate. The filling itself is essentially a very thick, chicken-enriched cream sauce — nothing fancy, nothing elaborate. It is comfort food built from classical technique.

### Ingredients

- Single lard crust: 200g (1⅔ cups) plain flour; 100g (7 tbsp) cold pasture-raised lard, cubed; pinch of sea salt; 4–5 tbsp ice-cold water; 1 egg beaten with 1 tbsp milk for egg wash
- Filling: 600g (1.3 lb) cooked chicken (roast or poached), shredded into pieces
- 3 tbsp unsalted grass-fed butter
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, diced 1cm
- 2 celery stalks, diced
- 100g (¾ cup) frozen peas
- 3 tbsp plain flour
- 400ml (1⅔ cups) good chicken stock
- 200ml (¾ cup) heavy cream
- 1 tsp fresh thyme leaves
- Sea salt and black pepper

### Method

1. Make the lard crust: mix flour and salt. Rub in cold lard until coarse and crumbly. Add ice water one tablespoon at a time until the dough just comes together. Flatten to a disc and refrigerate for 30 minutes.
2. Preheat oven to 200°C (400°F). Melt butter in a wide saucepan over medium heat. Cook the onion, carrots, and celery for 8 minutes until softened.
3. Add the garlic and flour. Stir and cook for 1 minute until the flour smells nutty.
4. Add the chicken stock gradually, stirring constantly to avoid lumps. Then add the cream. Bring to a simmer.
5. Cook for 5–8 minutes, stirring, until the sauce is thick enough to coat the back of a spoon.
6. Add the shredded chicken, frozen peas, and thyme. Season generously with salt and pepper. The filling should be well seasoned — it needs to stand up inside the crust.
7. Pour the filling into a 28×20cm (11×8 inch) baking dish or a 25cm (10-inch) deep pie dish.
8. Roll the lard crust to fit the dish with a 2cm overhang. Lay over the filling. Press the edges to the rim of the dish and crimp with a fork. Cut 5–6 vents.
9. Brush with egg wash. Bake for 30–35 minutes until the crust is deep golden and the filling is bubbling through the vents.
10. Rest 10 minutes before serving.

Frequently Asked Questions

Can I use rotisserie chicken?

Yes — rotisserie is ideal. It's already seasoned and the right texture. Remove the skin and shred the meat.

Is this seed oil free?

Yes. Lard, butter, heavy cream, chicken, and vegetables contain no seed oils. Check your chicken stock — most store-bought stocks are clean but some add sunflower oil.

Can I use a full double crust?

Yes. Double the lard pastry recipe, line the dish with the bottom crust first, add filling, then top with the second crust. The bottom crust will be softer from the filling but the effect is richer.
