# Coconut Oil Chocolate Bark — Seed Oil Free Treat

Dark chocolate bark is one of the simplest seed oil free treats — and one of the easiest to get wrong at the shop. Most commercial chocolate bark uses palm kernel oil, soybean lecithin, or vegetable oil as emulsifiers. Good quality dark chocolate (70%+ cocoa) uses only cocoa butter, which is the natural fat of the cacao bean and entirely seed oil free.

Adding a small amount of coconut oil to the melted chocolate produces a slightly thinner, glossier bark that snaps cleanly and melts smoothly. The sea salt is non-negotiable — it amplifies the cocoa flavour and provides contrast.

## Coconut Oil Chocolate Bark Recipe

### Ingredients

- 300g (10oz) good quality dark chocolate (70%+ cocoa) — check label for cocoa butter only as fat
- 2 tbsp refined coconut oil
- Flaky sea salt (Maldon or similar)
- Optional toppings: roasted almonds, pistachios, dried cranberries, cacao nibs, freeze-dried raspberries

### Method

1. Line a baking sheet with parchment paper.
2. Melt the dark chocolate and coconut oil together: place in a heatproof bowl over a pan of barely simmering water (bain marie), stirring until smooth. Alternatively, microwave in 30-second intervals, stirring between each.
3. Pour the melted chocolate onto the prepared parchment. Use a spatula to spread to approximately 5mm thickness.
4. Immediately scatter flaky sea salt over the surface and any optional toppings.
5. Transfer to the refrigerator. Chill for at least 1 hour until completely set.
6. Break into irregular pieces. Store in an airtight container in the refrigerator for up to 2 weeks.

Frequently Asked Questions

How do I check if dark chocolate is seed oil free?

Read the ingredient list. Look for: cocoa mass/liquor, sugar, cocoa butter, vanilla. Any mention of soybean lecithin, sunflower lecithin, or palm oil indicates added seed-derived fats. Most premium brands (Lindt 70%+, Green & Black's, Theo) use only cocoa butter.

Is coconut oil seed oil free?

Yes — coconut oil is pressed from the meat of the coconut fruit, not a seed.

Why does the chocolate not temper?

Adding coconut oil takes the chocolate out of temper, which is why the bark must be stored in the refrigerator. Fully tempered chocolate (complex technique) would be shelf-stable.
