# Ghee Baked Chicken — Whole Bird, Ancestral Fat Crust

Baking chicken in ghee rather than olive oil or butter produces the crispiest skin achievable in a domestic oven. Ghee's smoke point of 485°F means you can run the oven at 220°C — the temperature required for genuinely crispy skin — without the fat burning on the pan surface and filling the kitchen with smoke. The result is skin that shatters, meat that is moist throughout, and a pan dripping of concentrated ghee and chicken fat that you will want to save for roasting vegetables.

## The Skin Problem

Chicken skin fails to crisp for one of three reasons: moisture, too-low heat, or too little fat. Moisture is the most common cause — wet chicken skin steams in the oven rather than roasting. Dry the chicken thoroughly, refrigerate it uncovered on a rack for at least an hour (overnight is better), and cook at a high enough temperature that the moisture evaporates immediately rather than pooling. Ghee is the right fat for high-heat chicken because it can withstand the temperature required.

## Spatchcocking for Even Cooking

A spatchcocked chicken — backbone removed and bird flattened — cooks significantly more evenly than a trussed whole bird. The thighs and breasts finish at the same time because they are at the same height and receive the same oven heat. It also reduces cooking time by 30%. Use kitchen scissors to cut down either side of the backbone, remove it, and press the bird flat with the heel of your hand.

### Ingredients

- 1 whole chicken, spatchcocked or jointed
- 3 tbsp ghee, softened
- 4 garlic cloves, minced
- Zest of 1 lemon
- Fresh thyme and rosemary leaves
- 1 tsp smoked paprika
- Salt and black pepper

### Method

1. Dry the chicken thoroughly with kitchen paper. If time allows, refrigerate uncovered on a rack for 1-24 hours.
2. Preheat oven to 220°C (200°C fan).
3. Combine ghee, garlic, lemon zest, thyme, rosemary, and paprika into a paste.
4. Push the ghee mixture under the skin of the breasts and thighs. Rub the remainder over the skin.
5. Season generously with salt and pepper.
6. Place in a roasting tin skin-side up. Roast 40-45 minutes for a spatchcocked bird until the juices run clear and the skin is deeply golden.
7. Rest for 10 minutes before serving.

## Reading Doneness

Insert a knife between the thigh and body — the juices should run clear with no pink. The thigh meat should be tender when pressed. An instant-read thermometer in the thickest part of the thigh (not touching bone) should read 75°C. The skin should sound hollow when tapped — that is the moisture having fully evaporated, which means the skin is genuinely crispy rather than just coloured.

Can I use bone-in chicken pieces instead of a whole bird?

Yes — thighs take 35-40 minutes, drumsticks 30-35, breast pieces 25-30\. Start skin-side down for 15 minutes then flip for the remainder.

Can I substitute butter for ghee?

Butter will work but the milk solids may burn at 220°C. If using butter, reduce oven temperature to 200°C and watch closely.

What to do with the pan drippings?

Save them. The ghee and chicken fat mixture in the roasting tin is excellent for roasting potatoes, dressing salad greens, or enriching a pan sauce. Refrigerate and use within a week.
