# Ghee Deviled Eggs — Seed Oil Free, Creamy and Rich

Deviled eggs without seed oils are the version the recipe was always meant to be. Commercial mayonnaise — the standard binding agent in deviled egg filling — is made with soybean or canola oil. This recipe uses ghee and Dijon mustard instead, producing a filling that is richer, more flavourful, and completely free of industrial seed oils.

The principle is simple: the yolk filling needs fat to become creamy and smooth. Ghee provides that fat with a nutty, clarified butter flavour that neutral oil cannot contribute. Combined with Dijon mustard for tang and apple cider vinegar for acidity, the filling is smooth, bold, and specifically flavoured — not a pale imitation of the mayo version.

### Ingredients

- 12 large eggs
- 3 tbsp ghee (room temperature, soft not liquid)
- 2 tsp Dijon mustard
- 1 tbsp apple cider vinegar
- Salt and white pepper
- Smoked paprika to garnish
- Optional: fresh chives, crispy bacon

### Method

1. Boil eggs in gently simmering water for 10 minutes exactly.
2. Transfer immediately to ice water. Cool 5 minutes. Peel under running water.
3. Halve lengthways. Pop yolks into a bowl.
4. Mash yolks until smooth. Add ghee, mustard, and vinegar. Mix until creamy and smooth.
5. Season well with salt and white pepper.
6. Pipe or spoon into egg white halves. Dust with smoked paprika.
