# Ghee Deviled Eggs — Seed Oil Free, Creamy and Rich

Deviled eggs made with ghee instead of mayonnaise are lighter, cleaner, and more nutritionally honest than the standard version. Most commercial mayonnaise is made with soybean or canola oil — exactly the seed oils that MAHA cooking eliminates. Ghee replaces the oil component with clarified butter, adding a subtle nuttiness that complements egg yolk in a way that neutral oil cannot. The result is a deviled egg that actually tastes like eggs and butter.

## Why the Fat in Mayo Matters

Standard deviled eggs use mayonnaise as the binding and enriching agent for the yolk filling. Mayonnaise is an emulsion of oil in egg yolk — but the oil in commercial mayonnaise is almost always soybean or canola oil, both high in linoleic acid and produced through industrial solvent extraction. Making the yolk filling with ghee and a small amount of Dijon mustard produces an equally smooth, creamy filling with ancestral fat and without the industrial oil.

## Perfect Hard-Boiled Eggs

The quality of the boiled egg determines everything. Eggs that are overcooked develop the green ring around the yolk — iron sulphide formed when hydrogen sulphide from the white meets iron in the yolk at high temperatures. ### Ingredients

- 12 large eggs
- 3 tbsp ghee, softened (not melted)
- 2 tsp Dijon mustard
- 1 tbsp apple cider vinegar
- Salt and white pepper
- Smoked paprika to garnish
- Optional: fresh chives, crispy bacon crumbles

### Method

1. Place eggs in a single layer in a pot. Cover with cold water by 2cm. Bring to a rolling boil over high heat.
2. Reduce to a gentle boil and cook exactly 10 minutes.
3. Drain immediately and transfer to a bowl of ice water. Cool for 5 minutes.
4. Peel under running water. Halve lengthways and pop out the yolks.
5. Mash yolks in a bowl until completely smooth. Add ghee, mustard, and vinegar. Mix until creamy.
6. Season with salt and white pepper. Taste and adjust — the filling should be well-seasoned.
7. Spoon or pipe filling into egg white halves. Dust with smoked paprika and top with chives if using.

## Getting the Filling Smooth

Lumpy deviled egg filling is caused by incompletely mashed yolks or ghee that is too firm. Pass the yolks through a fine sieve for the smoothest possible filling before adding the ghee. The ghee should be at room temperature and soft — not liquid. A small hand blender or food processor produces the creamiest result if you are making a large batch.
