# Ghee Scrambled Eggs — The Perfect Technique

Scrambled eggs are the most frequently made egg dish and the most frequently overcooked. The correct technique is the opposite of what most people do: low heat, continuous movement, and removal from the heat before the eggs look finished. The residual heat in the pan and the eggs themselves completes the cooking.

Ghee is the best fat for scrambled eggs. Unlike butter, it will not burn if the pan gets briefly too hot. Unlike any seed oil, it contributes a rich, nutty flavour that enhances the eggs rather than disappearing. The difference between ghee scrambled eggs and any oil version is immediate and profound.

## Ghee Scrambled Eggs — The Technique

### Ingredients

- 4 large eggs, as fresh as possible
- 1.5 tbsp ghee
- Fine sea salt and white pepper
- Fresh chives or spring onion, finely chopped
- Sourdough toast to serve

### Method

1. Crack the eggs directly into a cold, non-stick saucepan. Add the ghee. Do not season yet — salt draws moisture from the eggs if added too early.
2. Place the pan over medium-low heat. Begin stirring immediately with a flexible rubber spatula, pushing the eggs from the edges to the centre continuously.
3. Every 30 seconds, lift the pan completely off the heat for 5 seconds while continuing to stir. This prevents the eggs from setting too fast.
4. After 5-7 minutes of this on-off technique, the eggs will form large, glossy, soft curds. When the eggs look 80% set — still slightly underdone and very glossy — remove the pan from the heat entirely.
5. Season with salt. Stir once more — the residual heat finishes the last 20%.
6. Serve immediately on toast. The eggs should be creamy, soft, and barely holding their shape.

Why cook in a cold pan?

Starting in a cold pan gives more control — the eggs heat gradually and you can see exactly what is happening. Hot-pan scrambled eggs can go from raw to overcooked in 20 seconds.

Is this seed oil free?

Yes. Ghee is the only fat.

Why remove from heat before fully set?

Eggs continue cooking from residual heat in the pan and in themselves. If you wait until they look done, they will be overdone. The perfect scrambled egg should look underdone when it leaves the heat.
