# Golden Milk With Ghee and Turmeric — MAHA Anti-Inflammatory Drink

Golden milk is warm milk spiced with turmeric, black pepper, ginger, and cinnamon — a drink with deep roots in Ayurvedic tradition where it is called haldi doodh (turmeric milk). The modern golden milk latte is a Western adaptation of this tradition. In both versions, the essential ingredient is fat: curcumin, the compound in turmeric responsible for its anti-inflammatory properties, is fat-soluble and poorly absorbed without dietary fat. The ghee or coconut oil in golden milk is not optional — it is the mechanism by which the turmeric works.

## Curcumin and Fat Solubility

Curcumin makes up approximately 2-5% of turmeric by weight. It is hydrophobic — it does not dissolve in water — but dissolves readily in fat. Studies on curcumin bioavailability consistently show that consuming turmeric with fat increases absorption significantly compared to turmeric consumed in water-based preparations. Ghee, the traditional Ayurvedic vehicle for turmeric, is the most historically grounded fat pairing. Coconut oil works equally well.

## Black Pepper and Piperine

Black pepper contains piperine, which inhibits the enzyme responsible for metabolising curcumin in the liver and intestinal wall. Adding black pepper to turmeric preparations increases curcumin bioavailability by up to 2000% in some studies. The quantity required is small — a pinch to 1/4 tsp per serving is sufficient. This is why traditional golden milk recipes include black pepper even in sweet preparations.

### Ingredients

- 240ml whole milk or oat milk
- 1 tsp turmeric powder (or 2cm fresh turmeric, grated)
- 1 tsp ghee or coconut oil
- 1/4 tsp cinnamon
- 1/4 tsp ground ginger
- Pinch of black pepper (essential)
- 1 tsp honey or maple syrup (optional)

### Method

1. Warm milk in a small saucepan over medium heat. Do not boil.
2. Add turmeric, cinnamon, ginger, and black pepper.
3. Whisk to combine. Add ghee.
4. Continue warming, whisking, for 3 minutes until the ghee is fully incorporated and the milk is fragrant.
5. Pour into a cup. Sweeten with honey if desired.
6. Drink warm.

## Fresh vs Dried Turmeric

Fresh turmeric — the bright orange rhizome available at South Asian grocery stores and some supermarkets — has a more complex, slightly citrusy flavour than dried powder. Grate it finely (from frozen is easiest) and use double the quantity of fresh versus dried. The curcumin content is similar in both forms; fresh turmeric has additional volatile aromatics that dried processing destroys.

## Variations

- Spiced: add cardamom, clove, and nutmeg for a chai-spiced golden milk
- Chocolatey: add 1 tsp cacao powder for golden chocolate milk
- Iced: blend with ice and coconut cream for a golden latte
- Strong: double the turmeric for deeper colour and flavour

Does golden milk need to be made with dairy?

No — coconut milk, oat milk, and almond milk all work. Coconut milk is the most MAHA-aligned non-dairy option and adds its own fat for curcumin absorption.

Can I make golden milk without ghee?

Coconut oil is an equivalent substitute. Some fat is essential for curcumin bioavailability — skipping the fat reduces the effectiveness of the turmeric significantly.

How often should I drink golden milk?

There is no established therapeutic dose for turmeric from food sources. One cup daily as part of a varied diet is a reasonable starting point.
