# How to Grow Potatoes at Home — Bumper Crops in Small Spaces

Potatoes are one of the most satisfying vegetables to grow — digging up a buried plant to discover a cache of fresh potatoes feels like finding treasure. They also grow well in containers, raised beds, and even bags on a patio.

## What to Grow

First earlies like Rocket and Swift are ready in 60 to 70 days and produce waxy, flavourful new potatoes perfect for boiling and dressing in butter. Main crop varieties like Desiree and King Edward take longer — 110 to 120 days — but produce larger yields of floury potatoes perfect for roasting in tallow and mashing with butter.

## Chitting

Chitting means encouraging seed potatoes to sprout before planting. Stand seed potatoes in egg boxes or trays with the rose end (the end with the most eyes) facing up in a cool, light room for 4 to 6 weeks before planting. Chitting speeds emergence by 2 to 3 weeks and increases yield.

## Earthing Up

As potato plants grow, hill soil up around the stems every 2 weeks until the plants are about 30cm tall. This prevents the developing tubers from being exposed to light — which turns them green and toxic — and increases yield by giving the plant more stem to produce tubers along.

## Growing Potatoes at Home — Small Spaces, Big Yields

Potatoes are one of the most productive food crops per square foot of growing area. A single seed potato produces 5-10 pounds of edible tubers under good conditions. Grown in bags or containers, they require no permanent garden space — a 10-gallon fabric grow bag on a patio or balcony is sufficient for a meaningful harvest. ## Seed Potato Selection and Chitting

Seed potatoes are not the same as grocery store potatoes (which are often treated with sprout inhibitors). Certified seed potatoes are disease-free, untreated, and selected for variety characteristics. ## Potatoes and Ancestral Fat

The potato's full flavor potential is only realized with fat. Roast potatoes cooked in beef tallow develop a crust that no seed oil can produce — the Maillard reaction runs differently in saturated fat than in polyunsaturated fat, and the crust on a tallow-roasted potato is shatteringly crisp in a way that olive oil and canola oil cannot replicate. Mashed potatoes made with grass-fed butter and whole cream are the dish as it was intended before margarine and low-fat dairy entered the recipe. French fries cooked in beef tallow — the McDonald's method before 1990 — have a flavor that the canola oil version does not. Growing your own potatoes means access to varieties that are not commercially available, harvested at the moment of peak starch content for roasting or peak waxy density for salads.
