The result has a higher smoke point than butter, a nuttier flavour from the caramelisation of the milk solids during the clarification process, and a shelf life measured in months rather than weeks. ## Which Butter to Use

The quality of the starting butter determines the quality of the ghee. ## The Method

400g ghee

### Ingredients

- 500g unsalted grass-fed butter, cut into pieces

### Method

1. Place butter in a heavy saucepan over medium-low heat.
2. Allow to melt completely without stirring.
3. The butter will begin to foam on top — the water evaporating.
4. After 10 minutes, the foam will subside and small bubbles will appear.
5. After 15-20 minutes, the milk solids on the bottom will turn golden-brown and the ghee will smell nutty.
6. Watch carefully — the moment the golden milk solids turn from golden to brown is when maximum flavour is achieved.
7. Remove from heat immediately.
8. Strain through a fine cloth into a clean glass jar.
9. Cool and seal. The ghee will turn from liquid golden to solid pale yellow as it cools.

Make it when you have time and care about flavour — freshly made ghee from Kerrygold is measurably better than commercial ghee.
