# Kalua Pig in Tallow — Hawaiian Slow-Roasted Pork

Kalua pig is the centerpiece of every Hawaiian luau — pork shoulder slow-roasted in an underground oven called an imu, lined with hot lava rocks and banana leaves, for 8-12 hours until the meat collapses into tender, smoky shreds. The imu achieves its result through a combination of steam, radiant heat from the rocks, and the rendered pork fat that bastes the meat throughout the long cook. This home version replicates that fat-basting environment using beef tallow and a sealed Dutch oven.

## The Imu and Ancestral Fat

The imu is one of the oldest cooking vessels on earth — used across Polynesia for thousands of years before the Hawaiian islands were settled. The pork cooked in an imu is basted by its own rendered fat throughout the cook, in exactly the same way that a pot-roasted animal bastes itself. The fat is not a cooking medium added from outside — it renders from the pork and circulates within the sealed heat environment. Adding tallow amplifies this effect in the oven version, keeping the meat moist at the lower temperatures a domestic oven produces.

## Ti Leaves and Banana Leaves

Traditional kalua pig is wrapped in ti leaves (not tea leaves — ti plant, Cordyline fruticosa) and banana leaves before being lowered into the imu. The leaves steam and add subtle vegetal aromatics to the meat. In this home version, banana leaves (available frozen at Asian grocery stores) can line the Dutch oven to add authenticity, though the dish works perfectly without them.

### Ingredients

- 2kg pork shoulder, bone-in
- 2 tbsp beef tallow
- 2 tbsp Hawaiian sea salt or coarse sea salt
- 1 tbsp liquid smoke (hickory or mesquite)
- Optional: banana leaves to line the pot

### Method

1. Preheat oven to 160°C.
2. Score the pork shoulder all over with a sharp knife. Rub with sea salt thoroughly.
3. Mix tallow (melted) with liquid smoke. Rub all over the pork.
4. If using banana leaves, line the Dutch oven with them. Place pork inside.
5. Cover tightly with the lid. Cook 7-8 hours until the meat shreds easily with two forks.
6. Shred the pork directly in the pot, mixing the meat with the accumulated juices and fat.
7. Serve with rice, macaroni salad, and poi or sweet potato.

## The Salt

Hawaiian sea salt — alaea salt, coloured red by iron-rich volcanic clay — is the traditional seasoning for kalua pig. It has a mineral complexity that standard sea salt lacks. It is available online and in Hawaiian specialty stores. Standard coarse sea salt produces an excellent result. Never use fine table salt — the concentration is too high and the iodine adds a chemical note.

## Serving the Hawaiian Plate Lunch

Kalua pig is the protein component of the Hawaiian plate lunch — two scoops of white rice, one scoop of macaroni salad (dressed with mayo), and a protein. For a seed oil free plate, dress the macaroni salad with olive oil-based mayo or make it with ghee and Dijon. The rice and pork are inherently seed oil free.

Can I use a slow cooker?

Yes — this is actually the most convenient method. Salt and rub the pork, place in the slow cooker with 2 tbsp water, cook on low 10-12 hours. The result is extremely tender and well-suited to shredding.

What is liquid smoke?

A water-soluble smoke concentrate made by condensing real wood smoke. A small amount adds the smokiness the imu would provide. Use sparingly — 1 tablespoon is sufficient for a 2kg shoulder.

How do I store leftovers?

Shredded kalua pig keeps refrigerated for 5 days or frozen for 3 months. Reheat with a splash of water to restore moisture.
