# Lard Birria Tacos — Authentic Mexican Method, Seed Oil Free

Authentic birria tacos cooked in lard are one of the greatest examples of ancestral fat cooking in Mexican cuisine. The dried chilli braise, the consomé, the tortillas dipped in fat and toasted crispy — every component benefits from lard's clean, high-heat performance. This is the original method, before vegetable oil displaced lard from Mexican restaurant kitchens.

## Birria Tacos in Lard

The three places lard appears in birria tacos: browning the beef before braising (high heat, maximum Maillard reaction), dipping the tortillas in the fat layer of the consomé (which is itself enriched with rendered beef fat), and toasting them in a lard-seasoned comal. Each step is better in lard than in seed oil. The fat provides flavour; the seed oil contributes nothing.

### Ingredients

- 1.5kg beef chuck, large pieces
- 4 dried guajillo chillies
- 2 dried ancho chillies
- 2 chipotles
- 1 onion quartered
- 6 garlic cloves
- 1 tsp cumin
- 1 tsp oregano
- 3 tbsp lard
- 1L beef stock
- Corn tortillas, diced white onion, coriander, lime to serve

### Method

1. Toast chillies in a dry pan 30 seconds per side. Soak in boiling water 20 minutes.
2. Blend chillies with soaking water, onion, garlic, cumin, and oregano until smooth.
3. Brown beef in lard over high heat in batches.
4. Add chilli sauce and stock. Simmer covered 3.5-4 hours until beef shreds.
5. Shred beef. Strain consomé, season well.
6. Dip tortillas in the fat layer of the consomé. Toast on a hot pan. Fill with beef, onion, coriander.

## Storage and Reheating

Store the birria meat and consommé separately in the refrigerator for up to 5 days, or freeze for up to 3 months. The fat in the consommé will solidify on top when refrigerated — scrape it off and use it to fry the tacos on the next day. Reheat the consommé separately over medium heat.

## Recipe Variations

- **Beef variation** — substitute beef chuck or short ribs for the goat or lamb — the consommé develops a slightly different but equally complex flavour
- **Quesabirria** — before folding the taco, add a slice of Oaxacan cheese or Monterey Jack — the cheese melts from the heat of the consommé-dipped tortilla
- **Adjust the fat** — this recipe works equally well in ghee, lard, or grass-fed butter if lard is unavailable. Each fat produces a slightly different flavour profile; lard gives the most historically accurate result.

## What to Serve With Birria Tacos

Serve with the full consommé on the side for dipping — birria tacos eaten without the consommé are a diminished experience. Diced white onion, fresh cilantro, and lime wedges are the correct garnishes. Salsa roja or salsa verde both work; the consommé provides most of the flavour on its own.

What is the correct meat for birria tacos?

Traditionally goat (chivo) in the Jalisco region of Mexico. Lamb works equally well. Beef chuck or short ribs are widely used in the US adaptation. The slow braise time applies to all three — 3.5-4 hours at 300°F.

What makes birria tacos seed oil free?

The tortillas are fried in the rendered fat from the consommé surface — pure beef, lamb, or goat tallow — not canola or vegetable oil. The consommé itself is water, dried chiles, aromatics, and the rendered fat from the meat.
