# Low Carb Beef Tacos in Tallow — Seed Oil Free Mexican Cooking

Beef tacos cooked in tallow with lettuce wrap shells are one of the fastest weeknight MAHA meals. Ten minutes for the filling, no tortilla needed. The tallow gives the beef a depth of flavour that no other cooking fat matches at the high heat required to get a proper sear on ground beef without steaming it into grey submission. This recipe is deliberately simple — the quality of the beef and the fat do the work.

## Ground Beef Fat Percentage

Fat percentage in ground beef is the most important variable in taco quality. 80/20 (80% lean, 20% fat) is the standard for maximum flavour and moisture. Leaner ground beef — 90/10 or 93/7 — produces a drier, less flavourful filling that requires more seasoning to compensate for the lack of fat. The fat in the beef renders during cooking and self-bastes the meat. It is not something to avoid — it is the mechanism by which the beef develops flavour.

## The Tallow Sear

Heat the pan until the tallow smokes before adding the beef. Cold fat in a warm pan produces steamed, grey meat. Hot fat in a very hot pan produces caramelised, deeply flavoured meat with the Maillard crust that makes all the difference. Add the beef in one layer and leave it alone for 2 minutes. Resist the urge to stir immediately — the crust needs time to form.

### Ingredients

- 400g 80/20 ground beef
- 1 tbsp beef tallow
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp oregano
- Salt and black pepper
- For serving: large iceberg or butter lettuce leaves, diced tomato, diced avocado, sour cream, lime, fresh coriander, sliced jalapeño

### Method

1. Heat tallow in a large pan over highest heat until smoking.
2. Add ground beef in one layer. Do not stir. Cook 2 minutes until browned on the bottom.
3. Break up and stir. Add all spices and salt and pepper.
4. Cook a further 3-4 minutes until the beef is cooked through and has caramelised patches.
5. Taste for seasoning. Adjust salt, cumin, or lime juice.
6. Separate lettuce leaves. Spoon beef into each leaf and top with diced tomato, avocado, sour cream, coriander, and jalapeño.
7. Serve with extra lime wedges.

## Why Lettuce Wraps

Iceberg lettuce cups hold their shape, provide a satisfying crunch, and are cold against the hot beef — a contrast that works well. Butter lettuce is softer and has a milder flavour. Large romaine leaves also work. The lettuce wrap eliminates the need for a tortilla without sacrificing the hand-held eating experience that makes tacos satisfying.

Frequently Asked Questions

Can I use chicken instead of beef?

Ground chicken works but has a milder flavour and less fat, so it needs more seasoning and a hotter pan to get any browning. Chicken thigh mince is better than breast for this application.

Is this keto-friendly?

Ground beef in tallow with lettuce wraps and avocado is very low in carbohydrates. Add sour cream and jalapeño for a standard keto taco bowl.

Can I make the beef ahead?

Yes — the seasoned beef keeps refrigerated for 3 days and reheats well in a hot pan with a splash of water or beef stock.
