**At a glance:** Nyama Choma — East African Grilled Beef in Tallow: serves 4, cooked in tallow, with no seed oils.

Nyama choma — literally 'roasted meat' in Swahili — is the centrepiece of social eating across Kenya, Tanzania, Uganda, and beyond. It is sold at roadside joints called nyama choma spots, where the meat is grilled over charcoal and sold by weight, eaten standing up or at communal tables with cold beer and friends.

The greatness of nyama choma is in its restraint. Salt, fire, and good meat. No marinade. No sauce. The quality of the animal is the dish. In East Africa the traditional fat for greasing is what the meat renders itself — tallow from the beef, or fat from goat. No vegetable oil. The char develops on its own when the fat hits the coals.

### Method

1. Brush the meat generously with melted tallow on all sides. Season heavily with coarse salt.
2. Heat a grill or heavy cast iron griddle to its maximum temperature. You want intense heat.
3. Grill the ribs for 12–15 minutes per side, turning once, until deeply charred on the outside and cooked through. Do not move the meat between turns — let the char develop.
4. Rest the meat for 10 minutes. Cut or chop into pieces with a cleaver or heavy knife.
5. While the meat grills, make the ugali: bring the water and salt to a rolling boil. Pour in the maize meal in a steady stream, stirring constantly. Continue stirring over medium heat for 5–7 minutes until the mixture is very thick and pulls away from the sides of the pot cleanly.
6. For the kachumbari: combine all ingredients, season with salt, and let sit 10 minutes for the flavours to develop.
7. Serve the nyama choma with a mound of ugali and a bowl of kachumbari alongside.

Frequently Asked Questions

What is ugali?

White maize meal cooked with water until stiff — the staple starch of East Africa. Eaten by hand, pulled into a ball and used to scoop up meat and salad.

Is nyama choma seed oil free?

Yes. Salt, tallow, and meat. No seed oil has ever been traditional in nyama choma.

What cut of beef?

Short ribs are ideal — bone-in, with enough fat to baste naturally during grilling. Goat ribs are the most traditional option. Avoid lean cuts which dry out over direct heat.
