# One-Pan Butter Chicken Thighs With Roasted Vegetables

One-pan cooking is the weeknight format that eliminates excuses. Everything goes in one pan, the oven does the work, and you get a complete meal — protein and vegetables — with one thing to wash up. This version uses bone-in, skin-on chicken thighs seared in butter first, then placed skin-side up on the vegetables so the rendered chicken fat and butter drip down and baste the vegetables throughout the cook. The vegetables absorb the fat and caramelise at the edges. The chicken skin stays crispy because it is elevated above the steam.

## The One-Pan Principle

The secret to one-pan chicken and vegetables that actually works — where the vegetables are properly roasted rather than steamed — is separation. The vegetables go in first, spread in a single layer. The chicken thighs go on top, elevated slightly by the vegetables beneath them. The chicken fat drips down as it renders, basting the vegetables. The vegetables absorb the fat and caramelise. Nothing steams because the arrangement allows moisture to escape.

## Vegetable Selection

Root vegetables — potatoes, carrots, parsnips, celeriac — are the most reliable choice because they need the same cooking time as the chicken thighs (35-40 minutes). Softer vegetables like courgette, cherry tomatoes, and asparagus cook faster and are better added to the pan for the last 15 minutes. Broccoli and cauliflower work well cut into small florets. The key is uniform size — everything should be cut so it finishes at the same time.

### Ingredients

- 4 bone-in skin-on chicken thighs
- 50g butter, softened
- 4 garlic cloves, minced
- Fresh thyme and rosemary
- 1 tsp smoked paprika
- Salt and pepper
- 500g baby potatoes, halved
- 2 carrots, cut into chunks
- 1 red onion, cut into wedges
- 2 tbsp olive oil for vegetables

### Method

1. Preheat oven to 220°C. Combine softened butter with garlic, thyme, paprika, salt and pepper.
2. Toss vegetables with olive oil, salt, and pepper. Spread in a single layer in a large roasting tin or oven-safe skillet.
3. Pat chicken thighs dry. Season all over. Rub with the garlic butter, getting under the skin.
4. Place chicken thighs skin-side up on top of the vegetables.
5. Roast for 40-45 minutes until the chicken skin is deeply golden and crispy and the vegetables are tender and caramelised at the edges.
6. Rest 5 minutes before serving directly from the pan.

## Why This Works Without Turning

The key to not turning the chicken mid-cook is starting the oven high enough (220°C) that the skin crisps through radiant heat from above. Lower temperatures require flipping to crisp the skin. At 220°C, the skin crisps within 15-20 minutes and maintains that crispness for the remainder of the cook. The bottom of the thigh cooks from the heat radiating off the hot vegetables beneath it.

Frequently Asked Questions

Can I use chicken breasts?

Breast on the bone works but needs monitoring — it can overcook to dryness more easily than thighs. Boneless breast will cook faster and is best added to the pan for the last 20 minutes only.

What if the vegetables are browning too fast?

Reduce oven temperature to 200°C and add a splash of chicken stock to the pan. The vegetables should caramelise, not burn.

Can I add sauce?

A simple pan sauce: remove chicken and vegetables, place the roasting tin on the hob, add 200ml chicken stock, scrape up the bits, and simmer 3 minutes. Whisk in a tablespoon of cold butter off the heat.
