If the pan is too hot when the skin goes in, the exterior browns before the subcutaneous fat has rendered, trapping steam beneath the skin and producing a pale, soft patch under the golden exterior. ### Ingredients

- 4 bone-in skin-on chicken thighs
- 30g unsalted butter
- 4 garlic cloves, skin on
- Fresh thyme sprigs
- 200g cherry tomatoes
- 1 lemon, halved
- 200g any quick-cooking vegetable: asparagus, green beans, or broccolini
- Salt, black pepper

### Method

1. Season chicken thighs well. Place skin-side down in a cold frying pan.
2. Add butter. Place over medium heat.
3. Cook skin-side down without moving 18-20 minutes until skin is deep golden and crispy.
4. Flip thighs. Add garlic cloves, thyme, and lemon halves cut-side down.
5. Cook 5 minutes on this side.
6. Add cherry tomatoes and vegetables to the pan.
7. Continue cooking 8-10 minutes until chicken is cooked through and vegetables are tender.
8. Squeeze the caramelised lemon over everything and serve directly from the pan.

How do I know when the skin is done?

It should release from the pan cleanly when you try to lift an edge. If it sticks, it needs more time. The rendered fat visible in the pan is a good sign — it means the skin fat has fully rendered.

What vegetables work best?

Quick-cooking vegetables that finish in the same time as the second-side cook (8-10 minutes): asparagus, cherry tomatoes, broccolini, green beans, thinly sliced courgette.

Can I do this in the oven?
