My new cookbook is out today. The **Seed-Oil-Free Air Fryer Cookbook: Crispy, Golden Recipes Cooked in Tallow, Ghee & Butter** is on Amazon in Kindle, paperback and hardcover. It has 91 recipes for the air fryer, and every one of them is cooked in a traditional fat instead of a seed oil or a can of cooking spray.

## Why an air fryer book cooked in real fats

An air fryer is a small, powerful convection oven. It needs far less fat than a deep fryer, but it still needs some: a light coat of fat is what turns a pale, dry surface golden and crisp. Many air fryer recipes reach for vegetable oil or an aerosol spray for that coat. This book uses beef tallow, lard, ghee, butter, coconut oil, olive oil and avocado oil instead. There's no canola, soybean, corn, sunflower, safflower, cottonseed, grapeseed or rice bran oil in it, and no aerosol sprays.

Because you use so little fat in an air fryer, every spoonful counts for flavor. A brush of tallow gives fries that fry-shop taste. Ghee carries spices into chicken. Butter browns on a crumb crust. The book is about cooking, not nutrition, and it makes no health claims.

## What's inside

The 91 recipes are split into nine chapters. Each recipe lists the servings, prep and cook times, the air fryer temperature and the fat it uses.

- **Breakfast:** crispy breakfast potatoes with ghee, tallow hash brown patties, cinnamon butter French toast sticks, lard breakfast hand pies.
- **Appetizers and wings:** classic crispy tallow wings, buffalo butter wings, garlic Parmesan ghee wings, tallow mozzarella sticks, ghee samosa bites.
- **Chicken:** golden tallow fried chicken thighs, butter chicken tenders, tandoori-spiced ghee chicken, Nashville hot tallow chicken sandwiches.
- **Beef and pork:** garlic butter steak bites, air-fried ribeye with a tallow baste, crispy pork belly bites, lard-crisped carnitas, tallow beef empanadas.
- **Seafood:** butter-basted salmon, tallow beer-battered-style fish, garlic butter shrimp, coconut shrimp in coconut oil, butter crab cakes.
- **Vegetables and sides:** crispy Brussels sprouts with bacon fat, ghee-roasted cauliflower bites, tallow onion rings, ghee sweet potato wedges.
- **Fries and potatoes:** classic tallow French fries, double-cooked tallow steak fries, butter smashed potatoes, crackly lard roast potatoes, tallow tater tots from scratch.
- **Snacks:** tallow potato chips, ghee spiced chickpeas, olive oil pita chips with za'atar, butter soft pretzel bites.
- **Desserts:** butter cinnamon sugar donuts, brown butter chocolate chip cookies, coconut oil churro bites, lard cherry turnovers.

At the back you'll find a conversion chart (temperatures, volume and weight) and a full index.

## The fat guide

Before the recipes, a short fat guide explains how I use each fat in the air fryer. The notes are culinary only:

- **Beef tallow** is my first choice for fries, wings, onion rings and anything breaded. Melt it gently before brushing or misting. (New to it? Start with [what tallow is and how to render it](https://thefoodiekitchen.net/what-is-tallow/).)
- **Lard** is mild and great on roast potatoes and in hand pies. Bacon fat is its smoky cousin.
- **Ghee** is butter with the milk solids cooked out and strained off, so it is less prone to scorching than whole butter. It's wonderful with spices. More in [What Is Ghee?](https://thefoodiekitchen.net/what-is-ghee/)
- **Butter** can scorch at the highest settings, so the book often uses it at 400°F or below, or brushes it on at the end.
- **Coconut, olive and avocado oil** cover baking, shrimp, vegetables, pita chips and fish, and the times you want a liquid fat.

You won't find a smoke point table in the book. Published figures vary with how a fat is made and refined, so instead of printing numbers it gives a practical rule: if the fat is smoking heavily, lower the temperature, empty any rendered fat from the drawer and wipe the heating element area once it is cool.

## The techniques

- **The misting method.** Many cooking sprays are made from seed oils such as canola or soybean. The book uses a refillable oil mister or pump sprayer filled with avocado oil, olive oil, or melted ghee, tallow or coconut oil, or simply a silicone pastry brush. That's why every recipe says "brush or mist".
- **Air fryer basics.** Preheat, cook in a single layer, shake or flip halfway, and treat times as guides because air fryers vary by brand, size and wattage.
- **Doneness by thermometer.** The book uses the USDA Food Safety and Inspection Service [Safe Minimum Internal Temperature Chart](https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/food-safety-basics/safe-temperature-chart), for example 165°F for poultry and 145°F for fish.
- **Label reading.** Seed oils hide in panko, breadcrumbs, tortillas, puff pastry, pie crusts, mayonnaise, marinara, pita and crackers, so the recipes flag the ingredients worth checking.
