# Smash Burgers in Tallow — Cast Iron, Beef Fat, No Seed Oils

The smash burger is the most honest burger there is. No fancy technique, no special equipment beyond a flat iron pan and a heavy spatula. You take a ball of 80/20 ground beef, press it hard onto a screaming hot surface, and cook it fast. The result is a burger with a deeply caramelised, lacey-edged patty that no thick-cut burger can match for flavour per bite. The fat you cook it in matters enormously. Tallow gives you the highest smoke point and deepest browning of any ancestral fat.

## Why Tallow Makes the Best Smash Burgers

The Maillard reaction — the browning reaction between proteins and sugars that creates flavour — requires high heat and dry conditions. Tallow has a smoke point of approximately 420°F, significantly higher than butter at 300°F. This means the surface of the pan can be significantly hotter when you press the beef, producing a faster and deeper crust before the centre overcooks. The result is a burger that is crispy on the outside and still pink in the middle.

### Ingredients

- 400g 80/20 beef mince
- 2 tsp beef tallow
- Salt and black pepper
- 4 slices American cheese
- 4 brioche buns, toasted
- Yellow mustard
- Diced white onion
- Pickles
- Special sauce: 2 tbsp mayonnaise, 1 tbsp ketchup, 1 tsp pickle juice

### Method

1. Divide beef into 4 equal balls (100g each). Do not season yet.
2. Heat cast iron pan over highest heat for 3-4 minutes. Add tallow. The pan is ready when the tallow smokes immediately on contact.
3. Place beef balls in the pan. Season the top with salt and pepper.
4. Immediately press flat with a heavy spatula or burger press. Hold pressure for 10 seconds.
5. Cook 90 seconds. Do not move the burger. The edges should be brown and lacey.
6. Flip once. Add cheese immediately. Cook 60 more seconds.
7. Stack two patties per bun. Serve with mustard, diced onion, pickles, and special sauce.

## The Double Smash

The classic smash burger is always a double — two thin patties rather than one thick one. Two 100g patties gives more crust-to-meat ratio than a single 200g patty, and the cheese melts between the two layers creating a pull that a single-patty burger cannot achieve. Stack them tight.

## Frequently Asked Questions

**Can I use butter instead of tallow?**

Butter will work but has a lower smoke point, which means less browning. Use clarified butter (ghee) as the closest substitute for tallow's high-heat performance.

**What beef fat percentage is correct?**

80/20 is the standard — 80% lean, 20% fat. Going leaner produces a drier burger. Going fattier can cause excessive flare-up and an oily result. 80/20 is the sweet spot.

**Do I need a cast iron pan?**

Ideally yes. Cast iron retains heat better than stainless steel, which means when the cold beef hits the surface it does not drop the temperature significantly. A stainless steel griddle works as an alternative.
