New to beef tallow? [What Is Beef Tallow →](https://thefoodiekitchen.net/what-is-tallow/)

These apple cider donuts use reduced apple cider in the batter for concentrated flavour, and beef tallow for frying at 350°F. Tallow gives a crisper exterior than vegetable oil because it is more stable at frying temperature and does not absorb into the donut the way seed oils do.

Frequently Asked Questions

What temperature for frying donuts in tallow?

350°F (175°C). Too low and the donuts absorb excess fat; too high and the outside browns before the inside cooks. Use a thermometer.

Can I use lard instead of tallow?

Yes. Lard has a slightly lower smoke point but is perfectly suitable for donut frying at 350°F. The flavour is more neutral than tallow.

How long do tallow-fried donuts keep?

Best eaten the same day. Store without the cinnamon sugar coating in an airtight container for up to 24 hours, then roll before serving.
