# Tallow Roast Potatoes — The Crispiest Possible

The crispiest roast potato requires three things that almost no one does simultaneously: a floury variety (Maris Piper or Russet), parboiling until the edges are genuinely soft, and very hot animal fat. Tallow heated to near-smoking in the tin before the potatoes go in creates an immediate crust on contact that vegetable oil cannot replicate because saturated fat holds temperature better when cold food is added.

The roughing step — shaking the drained potatoes in the dry pot until the edges are frayed and fluffy — creates more surface area for crisping. Each frayed edge becomes a separate crispy protrusion. Smooth potato surfaces produce good roasties. Roughed potato surfaces produce exceptional ones.

## Tallow Roast Potatoes Recipe

### Ingredients

- 1.2kg (2.6 lb) Maris Piper, King Edward, or Russet potatoes, peeled and cut into quarters
- 3 tbsp beef tallow
- Coarse sea salt
- Optional: 4 whole garlic cloves (unpeeled), 2 sprigs fresh rosemary

### Method

1. Preheat oven to 220°C (425°F) with the tallow in a large roasting tin inside.
2. Peel and quarter the potatoes. Boil in heavily salted water for exactly 10 minutes — the edges should be just soft but the centres still firm.
3. Drain in a colander. Return to the empty pot over medium heat for 2 minutes to steam completely dry.
4. Put the lid on the pot. Shake vigorously 4-5 times. The potato edges should look ragged and fluffy. This is the texture that becomes crispy.
5. Carefully remove the roasting tin from the oven. The tallow should be smoking. Tip the potatoes into the hot fat — they will spit aggressively.
6. Turn each potato to coat in tallow. Return to the oven immediately.
7. Roast for 45-55 minutes, turning twice, until deeply golden on all sides with a hard, crispy crust.
8. Drain on a rack. Season with sea salt and serve immediately.

Frequently Asked Questions

Why tallow and not goose fat?

Both produce excellent results. Tallow has a slightly higher smoke point (420°F vs 375°F for goose fat) and is significantly cheaper. Either is seed oil free. The technique is the same.

Is this seed oil free?

Yes. Beef tallow is the only fat.

Why Maris Piper or Russet?

Floury potato varieties have lower moisture and higher starch content than waxy varieties. The starch is what creates the crispy exterior. Waxy potatoes produce good boiled potatoes, not good roasties.
