# Turkish Coffee With Cardamom and Ghee

Turkish coffee is one of the oldest brewing methods still in daily use — ground coffee simmered in a small copper or brass pot (cezve or ibrik) with water and sugar, brought to a foamy near-boil, poured unfiltered into small cups, and drunk slowly while the grounds settle. The technique spread from Yemen through the Ottoman Empire to become the standard coffee preparation across the Middle East, North Africa, the Balkans, and Central Asia. The UNESCO cultural heritage designation applies to Turkish coffee as a living tradition.

## The Cezve

The cezve (Turkish) or ibrik (Arabic) is a small, long-handled pot with a wide base that narrows at the top. The shape is functional: the narrow neck concentrates the foam that rises during brewing, making it easier to control. Cezves come in copper, brass, and stainless steel — copper lined with tin is traditional and produces the best heat distribution for the careful temperature control Turkish coffee requires.

## The Cardamom Tradition

Cardamom-spiced coffee is the standard preparation across the Arabian Peninsula and the Levant — qahwa, the Arabic coffee ceremony, uses cardamom as the defining spice. In Turkish tradition, cardamom is added more selectively but is common in many regional styles. The spice's warm, citrusy, slightly floral notes complement the intensity of finely ground robusta or arabica, rounding the bitterness and adding complexity.

### Ingredients

- 150ml cold water
- 1.5 tsp very finely ground Turkish coffee (powder-fine)
- 1 tsp sugar (optional, add to pot not to cup)
- 1/4 tsp ground cardamom
- Optional: 1/2 tsp ghee

### Method

1. Add cold water to the cezve. Add coffee, sugar if using, and cardamom.
2. Stir to combine. Place on the lowest possible heat.
3. Watch carefully. As the coffee heats, foam will begin to rise.
4. Just before it boils, remove from heat. Let the foam settle slightly.
5. Return to heat and allow to rise again — this is the second rise.
6. Remove from heat. If using ghee, stir in now.
7. Pour slowly into a small cup, holding back the grounds with a spoon initially.

## Reading the Grounds

After drinking, the cup is traditionally turned upside down on its saucer and the pattern of grounds is read — tasseography, or coffee reading. Whether or not you engage with the fortune-telling tradition, the grounds provide a physical record of the brew: a thick, wet layer of fine grounds indicates proper extraction; dry, clumped grounds indicate the coffee was cooked too fast.
