Niter kibbeh is the fat that makes Ethiopian cooking what it is. It is ghee — clarified butter with the milk solids removed — spiced during the clarification process with a careful selection of aromatics: onion, garlic, ginger, cardamom, fenugreek, black cumin, korarima (Ethiopian cardamom), rue, and turmeric. The result is a golden, aromatic clarified butter that perfumes every dish it touches. Doro wat, misir wot, kitfo, and virtually every Ethiopian savoury dish begins with niter kibbeh.

## Niter Kibbeh vs Ghee

Regular ghee is clarified butter with nothing added — the milk solids removed, the fat pure and golden. Niter kibbeh is clarified butter with the spice aromatics infused into it during the clarification process. The distinction matters in Ethiopian cooking because niter kibbeh provides the base spice flavour of the dish before any other ingredient is added. Substituting regular ghee produces a dish that is good but lacks the characteristic Ethiopian aromatic foundation.

## How to Make Niter Kibbeh

### Ingredients

- 250g unsalted butter
- 1 small onion, quartered
- 4 garlic cloves, crushed
- 2cm fresh ginger, sliced
- 6 cardamom pods, lightly crushed
- 1/2 tsp fenugreek seeds
- 1/4 tsp turmeric
- 2 cloves
- 1/2 tsp black cumin (nigella seeds)
- Optional: 1 sprig fresh rue (tena adam)

### Method

1. Combine all ingredients in a heavy saucepan over the lowest possible heat.
2. Simmer very gently for 30-35 minutes. The butter will clarify — milk solids will separate and settle.
3. The butter should be completely clear with the spice aromas fully infused.
4. Strain through a fine cloth or muslin. Discard solids.
5. Pour into a clean jar. Seal.
6. Keeps refrigerated for 2 months, at room temperature for 1 month in a cool kitchen.
