Instant Pot Bone Broth Recipe
Ingredients
- 2kg beef marrow and knuckle bones (or whole chicken carcasses)
- 2 tbsp beef tallow
- 2 tbsp apple cider vinegar
- 1 large onion, quartered
- 3 carrots, broken
- 3 celery stalks, broken
- 1 head garlic, halved
- 2 bay leaves
- Fresh thyme
- Sea salt to taste
- Cold water — fill to the Instant Pot's maximum line
Method
- Roast the bones at 220°C for 30 minutes until browned. This step is not optional — it creates the flavour base.
- Place the roasted bones in the Instant Pot. Add the tallow, apple cider vinegar, vegetables, and herbs. Fill with cold water to the MAX line (do not exceed).
- Seal the lid. Set to Pressure Cook / Manual on High for 3 hours.
- Allow natural pressure release for 30 minutes (do not quick release — the pressure release time is part of the cooking).
- Open lid carefully. Strain through a fine-mesh strainer. Discard solids.
- Season with salt. Cool and refrigerate. A well-made bone broth should gel solid in the refrigerator.
- The fat cap that solidifies on top is pure tallow — stir back in for full nutrition or skim for a cleaner broth.
Will an Instant Pot make bone broth as gelatinous as slow-simmered?
Yes — the higher pressure temperature extracts collagen more efficiently. The gel yield from 3 hours at pressure is equivalent to 18-24 hours of gentle stovetop simmering.
Is Instant Pot bone broth seed oil free?
Yes. Bones, tallow, vegetables, and water contain no seed oils.
Why not fill past the MAX line?
The Instant Pot needs headspace for steam. Overfilling prevents proper pressurisation and may damage the valve.
