Lemon butter chicken pasta is the weeknight meal that proves seed oil free cooking is not about limitation. Twenty-five minutes. One pan for the chicken, one pot for the pasta. The sauce is nothing but butter, lemon, garlic, and pasta water — the starchy water emulsifies with the butter to create a glossy, silky coating that clings to every strand of pasta. The Pasta Water Secret
Pasta water is not waste — it is the ingredient that makes pasta sauces work. The water absorbs starch from the pasta during cooking, and when it is added to a butter sauce it emulsifies with the fat, creating a creamy coating that adheres to the pasta. Without pasta water, butter sauce breaks and pools at the bottom of the bowl. With it, the sauce becomes glossy and clingy. Reserve a full cup before draining — you may not need all of it, but you cannot retrieve it once it is gone.
Chicken Technique
Slice chicken breasts horizontally into thin cutlets before cooking. Thinner cutlets cook faster, develop more surface area for browning, and do not require the lower heat and longer cooking time that a thick breast needs to cook through without the outside burning. Season generously and cook in butter over medium-high heat — 3-4 minutes per side for a 1cm thick cutlet.

Ingredients
- 2 chicken breasts, halved horizontally into cutlets
- 300g linguine or spaghetti
- 80g unsalted butter, divided
- 3 garlic cloves, minced
- Juice and zest of 1 large lemon
- 100ml reserved pasta water
- Fresh parsley, chopped
- Salt and black pepper
- Grated Parmesan to serve
Method
- Cook pasta in well-salted boiling water until al dente. Reserve 1 cup pasta water before draining.
- Season chicken cutlets with salt and pepper. Melt 30g butter in a large pan over medium-high heat.
- Cook chicken 3-4 minutes per side until golden and cooked through. Remove and rest.
- In the same pan, add remaining butter and garlic. Cook 30 seconds over medium heat.
- Add lemon juice and zest. Add 100ml pasta water and simmer 2 minutes.
- Add drained pasta. Toss to coat, adding more pasta water if the sauce is too thick.
- Slice chicken and place on top. Finish with parsley and Parmesan.
Variations and Additions
- Add capers and anchovies with the garlic for a puttanesca-style depth
- Use ghee instead of butter for a more nutty, pronounced fat flavour
- Add baby spinach to the pasta for the last minute of tossing
- Substitute white wine for half the pasta water for more complexity
- Add crushed chilli flakes with the garlic for heat
Can I use dried pasta instead of fresh?
Dried pasta is standard for this dish — fresh pasta has different starch content and behaves differently with butter sauces. Linguine, spaghetti, or fettuccine all work well.
What if the sauce breaks?
A broken sauce means the emulsion has failed — the butter has separated from the water. Fix by adding a splash of the hot pasta water and tossing vigorously off the heat. The heat from the water will re-emulsify.
Can I substitute ghee for butter?
Yes — ghee produces a more pronounced fat flavour and a slightly different texture as it does not have the water content that helps with emulsification. Add a splash of extra pasta water to compensate.
