  • Palak paneer — fresh cheese in a spiced spinach sauce, finished with ghee. One of the most nutritionally complete vegetarian dishes in any cuisine.
  • Lamb rogan josh — Kashmiri braised lamb in a sauce of ghee, Kashmiri chilli and yoghurt. Deep red, intensely aromatic.
  • Chole bhature — spiced chickpeas cooked in ghee served with deep-fried bread. A Punjabi classic that requires proper fat.
  • Halwa — semolina cooked in ghee with sugar and cardamom. One of the most honest desserts in any culinary tradition.
  • Dal tadka — yellow lentils with a ghee tadka of cumin, garlic and dried chilli poured over at the table. The definitive everyday Indian dish.
  • Aloo gobi — potato and cauliflower cooked in ghee with turmeric, cumin and garam masala. Simple, perfect.
  • Khichdi — rice and lentils cooked together with ghee. The original comfort food, the dish given to the sick and the elderly, the foundation of all Indian cooking.

Why Ghee Cannot Be Replaced

Every dish in this book was developed using ghee as the primary cooking fat. The recipe developers of these dishes — stretching back centuries in some cases — did not use vegetable oil. The flavour profile of Indian cooking at its best is inseparable from ghee's nutty, caramelised notes. A tadka of cumin bloomed in ghee is a different sensory experience from the same cumin bloomed in canola oil. Both are technically functional. Only one is correct.
