Ingredients

  • 2 thick slices sourdough bread (clean label: flour, water, salt only)
  • 1 tbsp ghee (for toasting the bread)
  • 2 ripe Hass avocados
  • Juice of ½ lemon
  • Flaky sea salt
  • Red chilli flakes
  • 2 large eggs (fried in ½ tbsp tallow)
  • Optional: microgreens, crumbled feta, everything bagel seasoning

Method

  1. Heat the ghee in a skillet or cast iron over medium heat. Add the sourdough slices. Toast for 2-3 minutes per side until deeply golden and crispy on both sides.
  2. While the bread toasts, halve the avocados, remove the stones, and scoop the flesh into a bowl. Add the lemon juice and a generous pinch of flaky salt. Mash with a fork to your preferred texture — slightly chunky is better than completely smooth.
  3. In a separate small pan, heat ½ tbsp tallow over medium-high heat. Fry the eggs sunny-side up until whites are set and edges are slightly crispy.
  4. Spread the mashed avocado generously over the ghee-toasted bread.
  5. Top with the fried egg. Season with flaky sea salt and chilli flakes.
  6. Add any optional toppings and serve immediately.
