Ingredients

  • 450g salmon fillet, cured in salt 48 hours and rinsed (or hot-smoked salmon)
  • 4 ripe medium tomatoes, diced into 1cm pieces
  • 1 bunch spring onions (green onions), finely sliced
  • 1 small sweet (Maui-style) onion, finely diced
  • Sea salt to taste
  • Crushed ice for serving

Method

  1. To cure the salmon: rub 3 tablespoons of coarse sea salt all over the salmon fillet. Place in a glass dish, cover, and refrigerate for 48 hours. Rinse thoroughly under cold water, pat dry, and dice into 1-2cm pieces.
  2. In a large bowl, combine the diced salmon, tomatoes, spring onions, and sweet onion.
  3. Gently massage the mixture with clean hands for 2-3 minutes — lomi means to massage. The tomatoes will release some juice and the flavours will begin to meld.
  4. Taste and add sea salt if needed.
  5. Refrigerate for at least 1 hour before serving.
  6. Serve over crushed ice to keep cold. Traditionally served as a side to kalua pig and rice at a luau.
