Ingredients

  • 8 bone-in chicken pieces
  • 2 tbsp grass-fed butter
  • 1 large onion, halved and sliced
  • 4 garlic cloves, minced
  • 1 tsp ras el hanout
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • ½ tsp cinnamon
  • 400ml chicken stock
  • 1 preserved lemon, pulp removed, rind rinsed and sliced
  • 150g pitted green olives
  • Fresh coriander and flat-leaf parsley to serve
  • Steamed couscous or flatbread to serve

Method

  1. Heat the butter in a large, deep skillet over medium-high heat. Brown the chicken pieces for 3-4 minutes per side. Remove.
  2. Cook the onion in the same pan for 8 minutes until golden. Add the garlic and all spices. Cook 1 minute.
  3. Pour in the stock. Return the chicken. Add the preserved lemon rind and green olives.
  4. Cover and simmer over medium-low heat for 30 minutes until the chicken is cooked through.
  5. Uncover. Increase heat slightly and simmer for 10 more minutes until the sauce reduces.
  6. Scatter with fresh coriander and parsley. Serve with steamed couscous.
