The Science of the Perfect Roast Potato
Three things determine roast potato quality: surface starch, fat temperature, and steam release. Parboiling the potatoes until the edges are just starting to fluff creates the rough, starchy surface that becomes the crust. Shaking them vigorously in the colander after draining roughens the surface further. Pre-heating the tallow in a high oven means the potato hits hot fat immediately, starting the crust formation instantly rather than slowly steaming in warming fat.

Ingredients
- 1kg Maris Piper or Desiree potatoes, peeled and cut into large chunks
- 4 tbsp beef tallow

Method
- Preheat oven to 220°C (200°C fan). Place tallow in a large roasting tin and put in the oven to heat.
- Parboil potatoes in well-salted water for 10-12 minutes until the edges are just beginning to soften and fluff.
- Drain in a colander. Shake vigorously 4-5 times to roughen the surfaces. Let steam dry for 2 minutes.
- Carefully transfer potatoes to the hot tallow. They should sizzle immediately. Turn to coat all sides.

Potato Variety Matters
