French onion soup is a caramelisation project disguised as a soup recipe. The onions need a minimum of 60 minutes over genuine low heat to develop the deep amber colour and complex sweetness that give this soup its character. Anything faster produces onions that are merely soft and pale — acceptable, but not the same dish.
The traditional fat is butter, used generously enough that the onions essentially confit in it during the long cook. A small amount of olive oil prevents the butter from burning at the beginning. The Gruyère gratinée — the golden, bubbling cheese crust on top — is non-negotiable. It is what transforms a beef onion broth into the Parisian bistro dish that has been on menus since the eighteenth century.
French Onion Soup Recipe
Ingredients
- 1.5kg (3.3 lb) yellow onions, halved and very thinly sliced
- 3 tbsp unsalted grass-fed butter
- 1 tbsp extra virgin olive oil
- 1 tsp caster sugar
- 1 tsp sea salt
- 200ml (¾ cup) dry white wine or dry sherry
- 1 litre (4 cups) good quality beef stock
- 4 sprigs fresh thyme
- Black pepper
- To serve: 4 thick slices crusty baguette or sourdough, toasted; 150g (5 oz) Gruyère, coarsely grated
Method
- Melt the butter and olive oil together in a large, wide, heavy-bottomed pot over medium-low heat.
- Add all the onions and the salt. Stir to coat. Cook over medium-low heat for 60–70 minutes, stirring every 10 minutes, until the onions have collapsed completely and turned a deep, uniform amber-brown. Do not rush — the flavour lives in this step.
- Add the sugar. Cook for 5 more minutes until the colour deepens further.
- Pour in the wine. Simmer, scraping up any bits from the base of the pot, until the liquid has reduced and the onions look jammy again — about 5 minutes.
- Add the beef stock and thyme. Season with pepper. Simmer for 20 minutes.
- Preheat your grill (broiler) to high. Ladle the soup into four oven-proof bowls set on a baking tray.
- Float a toasted bread slice on each bowl. Pile the Gruyère generously on top.
- Grill for 3–5 minutes until the cheese is melted, bubbling, and golden in spots. Watch closely — it can burn quickly.
- Serve immediately, warning guests that the bowls are extremely hot.
How do I know when the onions are properly caramelised?
They should be the colour of dark copper — not pale gold, not tan, not dark brown. Deep amber. They will have reduced to about one-quarter of their original volume. This is the only reliable indicator.
What wine works best?
Dry white wine — Sauvignon Blanc, Pinot Grigio, or a dry sherry. The wine must be dry; sweet wine makes the soup cloying. Red wine can be used but changes the colour significantly.
Is this seed oil free?
Yes. Butter, olive oil, beef stock, and wine contain no seed oils.
