Kalua pig is the centrepiece of the Hawaiian luau — pork cooked in an underground pit (imu) on heated lava rocks, wrapped in banana leaves, and buried to cook low and slow for eight hours. The home oven version uses liquid smoke and the same low-slow principle to produce pork that falls apart under its own weight.

Tallow is the basting fat here. Rubbed over the pork before wrapping, it protects the surface during the long cook, contributes richness to the cooking juices, and produces a more flavourful end product than any seed oil coating. The pork fat itself is extensive enough that no additional fat is strictly necessary, but tallow elevates the result.

Ingredients

  • 2.5kg (5.5 lb) pork shoulder, bone-in
  • 2 tbsp beef tallow, softened
  • 2 tbsp Hawaiian sea salt (coarse) or fleur de sel
  • 2 tsp liquid smoke (hickory or mesquite)
  • Banana leaves or heavy foil for wrapping
  • Steamed white rice, macaroni salad, and lomi lomi salmon to serve

Method

  1. Preheat oven to 160°C (325°F).
  2. Score the pork shoulder all over with a sharp knife. Rub the softened tallow into every surface, then the salt, then the liquid smoke. Massage everything into the scores.
  3. Wrap the pork tightly in banana leaves (overlapping layers) or heavy-duty foil. Wrap a second time. Place in a deep roasting pan.
  4. Roast for 8 hours. Do not unwrap to check. The long low cook is what produces the texture.
  5. Remove from oven. Allow to rest, still wrapped, for 30 minutes.
  6. Unwrap. The pork should fall apart at the touch. Shred with two forks, mixing the meat through the accumulated cooking juices.
  7. Taste and add more salt if needed. Serve over steamed rice with traditional Hawaiian sides.
Frequently Asked Questions
Can I make this in a slow cooker?

Yes. Reduce liquid smoke to 1 tsp. Cook on Low for 10 hours. The result is excellent — less crispy outside but equally tender.

What is liquid smoke?

A natural product made by condensing the smoke from burning wood chips into water. The ingredient list should be only 'water and smoke'. No seed oils.

Is kalua pig seed oil free?

Yes. Pork fat, tallow, and sea salt contain no seed oils.
