Biryani is the most celebrated rice dish in India — a layered preparation of parboiled basmati rice and slow-braised meat, sealed in a heavy pot and cooked over the lowest possible heat until the rice absorbs the braising juices and the meat is completely tender. The dum pukht method — sealing the pot with dough to trap all steam and aroma inside — produces the most flavourful biryani because nothing escapes during the final cook. Every molecule of flavour from the saffron, the ghee, the spiced lamb, and the caramelised onion is absorbed into the rice.

Dum pukht means 'slow-cooked in its own steam' in Urdu — a cooking method brought to its peak of refinement in the Mughal court kitchens of Lucknow and Hyderabad. The pot is sealed with a thick rope of dough around the lid, then placed over the lowest possible heat (or on a tawa griddle pan to diffuse the heat further) for 20-30 minutes. The dough seal traps every atom of steam and aroma inside. At the table, breaking the dough seal releases the aroma — one of the great theatrical moments in cooking.

Ingredients

  • Lamb: 1kg bone-in lamb shoulder, cut into pieces; 200g full-fat yoghurt; 2 tbsp ghee; 1 tsp each cumin, coriander, garam masala; 1 tbsp ginger-garlic paste; salt
  • Rice: 400g basmati, soaked 30 min; whole spices (2 bay leaves, 4 cardamom, 1 cinnamon stick, 4 cloves); salt
  • Layering: 4 tbsp ghee; large pinch saffron in 4 tbsp warm milk; 4 onions thinly sliced and deep-fried in ghee until dark golden; fresh mint and coriander
  • Seal: 200g plain flour + water dough

Method

  1. Marinate lamb in yoghurt, ghee, and all spices minimum 4 hours.
  2. Fry marinated lamb in ghee 10 minutes. Add 200ml water. Simmer covered 45 minutes until nearly tender.
  3. Parboil rice in well-salted water with whole spices until 70% cooked — grains still have a white dot in the centre. Drain.
  4. In a heavy pot, layer: lamb with juices, half the fried onion, half the herbs, half the rice, remaining onion and herbs, remaining rice.
  5. Drizzle saffron milk and melted ghee over the top layer.
  6. Seal the pot lid with dough rope. Cook on lowest heat 25 minutes.
  7. Break the seal at the table.

The Fried Onion

Birista — deep-fried onion — is the flavour layer that separates great biryani from ordinary biryani. Thinly sliced onions fried in ghee until dark golden and crispy, then scattered between the rice layers, add a caramelised sweetness and textural contrast that penetrates every grain of rice as the dum steaming proceeds.

Frequently Asked Questions

Can I make biryani without dum pukht?

Yes — cover tightly with foil and then the lid, and cook on low heat. The flavour is slightly less concentrated but the result is still excellent.

How do I know when the rice is 70% cooked?

Bite a grain — it should be cooked but have a small white chalky dot in the centre. At 70%, the grain has enough residual starch to absorb the biryani moisture without becoming mushy.

What rice to use?

Extra-long aged basmati rice — the longer the grain, the better the dum biryani. Look for '1121' or 'Pusa' basmati varieties.
