The Spanish tortilla de patatas is one of the most satisfying things in European cooking — a thick, set omelette of potato and egg, cooked in olive oil, served at room temperature, eaten at any hour of the day. It appears as breakfast, tapas, lunch, and late-night snack with equal authority. The dish requires only five ingredients: eggs, potatoes, olive oil, onion, and salt. The quality of the olive oil and the patience of the cook determine the result.
The Olive Oil
A Spanish tortilla uses more olive oil than you think is appropriate. The potatoes are not sautéed — they are confited, cooked slowly submerged in oil at a temperature well below frying, until they are completely tender and slightly translucent. This is the technique that produces a tortilla with creamy, meltingly soft potato interior rather than the firm, browned potato of a quickly fried version. Use a neutral-flavoured extra virgin olive oil — not a peppery, assertive one — so the flavour is clean.
The Flip
The tortilla flip is the technique that intimidates home cooks. The tortilla is cooked until the bottom and edges are set but the top is still runny. A plate slightly larger than the pan is placed on top, and the pan is inverted quickly so the tortilla lands on the plate, runny-side down. The pan returns to the heat with a film of oil, and the tortilla slides back in to cook the other side. The whole operation takes 2 seconds and gets easier with practice.

Ingredients
- 6 large eggs
- 500g waxy potatoes, peeled and sliced 3mm thick
- 1 large onion, thinly sliced
- 150ml extra virgin olive oil
- Salt
Method
- Heat olive oil in a 22-24cm non-stick pan over medium-low heat.
- Add potatoes and onion. Season with salt. Cook slowly 20-25 minutes, stirring occasionally, until completely tender. They should not colour.
- Beat eggs in a large bowl. Season with salt.
- Remove potatoes and onion with a slotted spoon, reserving the oil. Add to eggs. Mix.
- Pour off most of the oil from the pan leaving a thin film. Reheat over medium.
- Add egg and potato mixture. Cook 4-5 minutes until the bottom is golden and the edges are set.
- Flip onto a plate, slide back into the pan. Cook 2-3 minutes.
- Rest 5 minutes before cutting.
Warm, Room Temperature, or Cold
A Spanish tortilla is at its best at room temperature — eaten 30 minutes to an hour after cooking. At this temperature, the egg has fully set and the potato flavour has developed. Cold tortilla from the fridge is excellent sliced and eaten as a sandwich filling in a crusty roll — the bocadillo de tortilla is one of Spain's great everyday foods.
Does the tortilla have to be flipped?
Yes — without flipping, one side is overcooked by the time the other side sets. The flip is the technique that makes a properly cooked tortilla possible.
Can I add other ingredients?
Classic tortilla is potato, egg, and optionally onion. Common additions: roasted pepper, spinach, chorizo. Purists (especially in the Basque Country) insist on potato and egg only.
What oil temperature for the potato confit?
Very low — the oil should barely bubble around the potatoes. If it sizzles actively, reduce the heat. The potatoes should cook without browning.
