  • 115g unsalted butter
  • 3 very ripe bananas (approximately 300g peeled weight)
  • 150g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200g all-purpose flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • Optional: 100g dark chocolate chips or walnuts

Method

  1. Brown the butter: melt in a saucepan over medium heat until the milk solids turn golden and smell nutty. Pour into a large bowl and cool 10 minutes.
  2. Preheat oven to 170°C. Grease and line a 900g (2lb) loaf tin.
  3. Mash bananas thoroughly — very few lumps. Add to the cooled brown butter.
  4. Add sugar, eggs, and vanilla. Mix well.
  5. Fold in flour, bicarbonate of soda, salt, and cinnamon until just combined.
  6. Fold in chocolate chips or walnuts if using.
  7. Pour into prepared tin. Bake 55-65 minutes until a skewer inserted in the centre comes out clean.
  8. Cool in the tin for 15 minutes, then turn out onto a rack. Slice when completely cool.
