Brown butter chocolate chip cookies are the upgrade that makes ordinary chocolate chip cookies seem unfinished. The brown butter takes 5 extra minutes and changes the cookie entirely — where regular butter cookies are sweet and pleasant, brown butter cookies are nutty, caramelised, and complex. Once you make cookies this way you will not go back. The technique is simple: cook the butter until the milk solids brown, cool it, and use it in place of regular softened butter.

When butter heats past its melting point and the water evaporates, the milk solids — casein and lactose — begin to brown through the Maillard reaction. The same reaction that gives bread its crust, steak its sear, and coffee its roasted notes applies here. The result is a fat with hundreds of new flavour compounds — diacetyl (butterscotch), furans (nutty), and pyrazines (coffee-like) — all of which transfer directly into the cookie dough.

Chilling the Dough

Chilling cookie dough for at least 24 hours (and up to 72) improves the final cookie in two measurable ways. First, the flour hydrates more completely, producing a more cohesive dough that spreads less during baking. Second, some of the sucrose breaks down into glucose and fructose, which caramelise more readily at baking temperatures. The result is a cookie with better spread control, chewier texture, and deeper flavour.

Ingredients

  • 225g unsalted butter
  • 200g granulated sugar
  • 100g light brown sugar (packed)
  • 2 large eggs + 1 egg yolk
  • 2 tsp vanilla extract
  • 280g all-purpose flour
  • 1 tsp bicarbonate of soda
  • 1 tsp fine salt
  • 300g dark chocolate chips or chopped chocolate
  • Flaky sea salt for finishing

Method

  1. Brown the butter: melt in a light-coloured saucepan over medium heat, stirring occasionally. Continue cooking until foam subsides and milk solids turn golden brown and smell nutty, 5-7 minutes. Pour immediately into a large bowl and cool to room temperature.
  2. Whisk both sugars into the cooled brown butter until combined.
  3. Add eggs, egg yolk, and vanilla. Whisk vigorously for 2 minutes until the mixture lightens slightly.
  4. Fold in flour, bicarbonate of soda, and salt until just combined.
  5. Fold in chocolate chips. The dough will be soft.
  6. Cover and refrigerate for at least 24 hours (72 hours is better).
  7. Preheat oven to 190°C. Scoop dough into 50g balls, spacing 5cm apart on lined baking trays.
  8. Bake 10-12 minutes until the edges are set but the centres look underdone. They will firm up as they cool.
  9. Sprinkle with flaky sea salt immediately from the oven.

Reading the Oven

Cookie baking success depends on knowing your oven. Most domestic ovens run 10-20°C hotter or cooler than displayed. If your cookies are spreading too much and going flat, your oven is too cool — the butter melts before the structure sets. If they are doming without spreading, your oven is too hot. An oven thermometer is the most useful baking tool you can buy.
