Ingredients

  • 2 x 400g cans chickpeas, drained
  • 3 tbsp ghee
  • 2 onions, very finely diced
  • 5 garlic cloves, minced
  • 2cm ginger, grated
  • 2 tomatoes, blended
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric
  • 1 tsp chaat masala
  • 1 tsp amchur (dried mango powder)
  • 1/2 tsp garam masala
  • Salt, fresh coriander, green chilli

Method

  1. Heat ghee over medium heat. Add cumin seeds.
  2. Add onion. Cook 12 minutes until deeply golden.
  3. Add garlic, ginger, and green chilli. Cook 2 minutes.
  4. Add coriander, cumin, turmeric powders. Stir 1 minute.
  5. Add blended tomato. Cook 8 minutes until oil separates.
  6. Add chickpeas and 200ml water. Simmer 15 minutes.
  7. Mash a few chickpeas to thicken. Add amchur and chaat masala.
  8. Finish with garam masala. Adjust seasoning.
  9. Serve with bhatura, puri, or rice.
