At a glance: Dutch Baby Pancake: ready in 25 minutes, serves 2, cooked in butter, with no seed oils.
A Dutch baby is the most theatrical breakfast you can make in 25 minutes. The batter goes in as a thin liquid. Twenty minutes later you pull out something that has climbed three inches up the sides of the cast iron and puffed into a dramatic bowl shape, golden and crispy at the edges, soft and custardy in the centre.
Brown butter is the version worth making. Regular melted butter produces a Dutch baby. Brown butter produces the Maillard reaction in the fat itself — nutty, caramel-edged, complex — and that flavour saturates every bite. The hot cast iron technique is not optional: the batter hitting a screaming-hot pan with hot butter already in it is what creates the dramatic puff. A warm pan produces a flat pancake.
Dutch Baby Pancake Recipe
Ingredients
- 3 large eggs, at room temperature — cold eggs produce less puff
- 80ml (⅓ cup) whole milk, at room temperature
- 65g (½ cup) plain flour
- 1 tbsp caster sugar
- ½ tsp pure vanilla extract
- Pinch of fine salt
- 3 tbsp (45g) unsalted grass-fed butter
- To serve: fresh lemon half, icing sugar, fresh berries, or pure maple syrup
Method
- Place a 25cm (10-inch) cast iron skillet in the oven. Preheat to 230°C (450°F) for at least 15 minutes — the skillet must be ripping hot.
- Combine the eggs, milk, flour, sugar, vanilla, and salt in a blender or whisk vigorously by hand until completely smooth with no lumps. Rest for 5 minutes.
- Remove the hot skillet from the oven using oven mitts. Add the butter immediately — it will spit and begin to brown rapidly. Swirl the pan to coat and let the butter brown for 30–45 seconds.
- Pour the batter directly into the hot, browned butter in one motion. Return to the oven immediately.
- Bake for 18–22 minutes until the Dutch baby has dramatically puffed up the sides of the skillet and turned deep golden. Do not open the oven door during baking — the drop in temperature will collapse it.
- Bring the skillet directly to the table — it is the serving vessel. Squeeze lemon juice over the top, dust with icing sugar, and add fruit or maple syrup.
- It will begin to deflate within 2–3 minutes of leaving the oven. This is completely normal and expected.
Why isn't my Dutch baby puffing?
Either the pan wasn't hot enough, the batter was cold, or the oven door was opened during baking. The egg proteins need immediate intense heat to set the structure.
Is this seed oil free?
Yes. Grass-fed butter is the only fat. Plain flour, eggs, and milk contain no seed oils.
Can I make it sweet or savoury?
Yes. For savoury: omit sugar and vanilla, add parmesan and thyme to the batter, top with smoked salmon and crème fraîche. For sweet: keep as written and add cinnamon.
Can I double it?
Use a 30cm (12-inch) skillet and scale all ingredients by 1.5×. Do not try to fit double batter in the same pan — it won't puff correctly.
