Niter kibbeh is the fat that makes Ethiopian cooking what it is. It is ghee — clarified butter with the milk solids removed — spiced during the clarification process with a careful selection of aromatics: onion, garlic, ginger, cardamom, fenugreek, black cumin, korarima (Ethiopian cardamom), rue, and turmeric. The result is a golden, aromatic clarified butter that perfumes every dish it touches. Doro wat, misir wot, kitfo, and virtually every Ethiopian savoury dish begins with niter kibbeh.
Niter Kibbeh vs Ghee
Regular ghee is clarified butter with nothing added — the milk solids removed, the fat pure and golden. Niter kibbeh is clarified butter with the spice aromatics infused into it during the clarification process. The distinction matters in Ethiopian cooking because niter kibbeh provides the base spice flavour of the dish before any other ingredient is added. Substituting regular ghee produces a dish that is good but lacks the characteristic Ethiopian aromatic foundation.
How to Make Niter Kibbeh
Ingredients
- 250g unsalted butter
- 1 small onion, quartered
- 4 garlic cloves, crushed
- 2cm fresh ginger, sliced
- 6 cardamom pods, lightly crushed
- 1/2 tsp fenugreek seeds
- 1/4 tsp turmeric
- 2 cloves
- 1/2 tsp black cumin (nigella seeds)
- Optional: 1 sprig fresh rue (tena adam)
Method
- Combine all ingredients in a heavy saucepan over the lowest possible heat.
- Simmer very gently for 30-35 minutes. The butter will clarify — milk solids will separate and settle.
- The butter should be completely clear with the spice aromas fully infused.
- Strain through a fine cloth or muslin. Discard solids.
- Pour into a clean jar. Seal.
- Keeps refrigerated for 2 months, at room temperature for 1 month in a cool kitchen.
Where to Buy Niter Kibbeh
Niter kibbeh is available ready-made from Ethiopian grocery stores and online. The ready-made version saves 35 minutes and is a perfectly acceptable substitute for homemade in most recipes — though the flavour of freshly made niter kibbeh from good butter is noticeably superior.
What to Cook With Niter Kibbeh
- Doro wat — Ethiopian chicken stew, the national dish
- Misir wot — red lentil stew, Ethiopia's great vegan dish
- Ethiopian kitfo — beef tartare dressed in niter kibbeh
- Berbere chicken — niter kibbeh as the braising fat
- Ethiopian coffee ceremony — a small spoonful in the coffee cup
Is niter kibbeh the same as ghee?
No — niter kibbeh is ghee spiced during the clarification process. Ghee is neutral; niter kibbeh is aromatic with cardamom, fenugreek, ginger, and other Ethiopian spices.
Can I use niter kibbeh in non-Ethiopian cooking?
Yes — it is excellent in any dish that benefits from both clarified butter and warm spice aromatics. Try it in Indian dal tadka instead of plain ghee, or in roast chicken in place of compound butter.
How long does niter kibbeh last?
Refrigerated: 2 months. Room temperature in a cool kitchen: 1 month. Like all clarified butter, the absence of milk solids makes it much more shelf-stable than regular butter.
