Red palm oil is one of the most misunderstood ingredients in global cooking. It is frequently confused with refined palm oil (the white, tasteless fat used in processed food) and palm kernel oil (pressed from the seed rather than the fruit flesh). None of these are the same product. Red palm oil — unrefined, cold-pressed from the orange-red flesh of the Elaeis guineensis fruit — is the ancestral fat of West African cooking. Its colour comes from carotenoids: the same compounds that colour carrots and sweet potatoes. Its flavour is rich, slightly earthy, distinctly African.
Red Palm Oil vs Refined Palm Oil
Refined palm oil — the white, flavourless fat found in processed foods, margarine, and commercial baked goods — is red palm oil that has been subjected to high-heat bleaching and deodorising. This process removes the carotenoids (the colour and nutrition), the flavour, and the distinctive character of the original oil. What remains is a neutral industrial fat. This is not what West African cooking uses. Red palm oil retains everything that refining removes.

Sustainability
Palm oil sustainability is a legitimate concern — deforestation associated with large-scale palm oil production is well documented.
