Nyama choma is the social food of East Africa — Kenya, Tanzania, Uganda, and Rwanda. Weekend afternoons, celebrations, and ordinary evenings all revolve around the charcoal grill, the slow rotation of goat or beef, the accumulation of friends, and the cold Tusker beer that traditionally accompanies the meal. It is one of the simplest great foods in the world: meat, fire, salt, and time.
The Meat
Goat is the traditional nyama choma meat — specifically bone-in goat pieces, which stay moist on the grill and provide the gnawing, communal eating experience that defines the meal. Beef ribs are the common alternative for those who prefer it. The meat is minimally seasoned before grilling — salt, sometimes garlic — because the quality of the charcoal and the slow cooking are the flavour sources, not complex marinades.
Charcoal and Time
Nyama choma is cooked over a charcoal grill at moderate, indirect heat for 1-2 hours. The slow cook is essential — high direct heat chars the outside before the inside is cooked, producing a dry, tough result. The correct method creates a grill with a hot zone and a cool zone, rotating the meat between them and basting periodically. The meat is done when it is deeply coloured, slightly charred at the edges, and the fat has fully rendered.

Ingredients
- 1.5kg bone-in goat or beef ribs, cut into pieces
- 2 tbsp beef tallow, melted
- 2 tsp coarse sea salt
- 1 tsp garlic powder
- Kachumbari: 3 tomatoes diced, 1 red onion finely diced, 1 green chilli diced, juice of 1 lime, fresh coriander, salt
- Ugali: 250g white maize meal (posho/unga), 500ml water
Method
- Season meat with salt and garlic powder. Allow to come to room temperature 30 minutes.
- Prepare charcoal grill with hot zone and cool zone.
- Place meat on cool zone. Cover grill if possible. Cook 45 minutes, turning occasionally.
- Move to hot zone. Baste with tallow. Cook 20-30 minutes until charred and deeply coloured.
- For ugali: boil water. Add maize meal gradually, stirring constantly. Cook 10-15 minutes until very thick and pulling away from the pot.
- For kachumbari: combine all ingredients. Rest 10 minutes.
- Serve meat with ugali and kachumbari.
Eating Nyama Choma
Nyama choma is eaten with the hands — the meat is pulled from the bone and dipped in kachumbari. Ugali is pinched from the mass, formed into a small ball, and used to scoop the kachumbari or to clean the fat from the plate. The combination of charred, fatty meat, fresh acidic salsa, and dense starchy ugali is one of the most complete flavour and texture combinations in African cooking.
Can I use a gas grill?
Yes — set one side to high and leave the other off to create the two-zone setup. The charcoal flavour is absent but the technique is identical.
What is ugali?
Ugali is a stiff porridge made from white maize meal — the staple carbohydrate of East Africa. It has no distinct flavour and serves as the neutral vehicle for the meat and salsa.

Halal butchers, African and Caribbean grocery stores, and some farmers markets. Ask for bone-in pieces specifically for grilling.
