Ingredients
- 300g basmati rice, soaked 20 min
- 50g ghee
- 1 onion, finely diced
- Advieh: 1 tbsp dried rose petals, 1 tsp cardamom, 1 tsp cinnamon, 1/2 tsp cumin, 1/2 tsp coriander
- 600ml hot stock or water
- Salt
Method
- Melt ghee over medium heat. Cook onion 8 minutes until soft and golden.
- Add all advieh spices. Stir 90 seconds until fragrant.
- Add drained rice. Stir to coat each grain in the spiced ghee. Toast 2 minutes.
- Add hot stock and salt. Bring to boil.
- Reduce to lowest heat. Cover tightly. Cook 15 minutes.
- Remove from heat. Rest 5 minutes covered.
- Fluff with a fork and serve.
What dishes to serve advieh rice with?
It is traditionally served with Persian khoresh (braises), alongside Persian lamb, or with simple ghee-baked chicken. The floral notes complement lamb particularly well.
Can I use ground rose petals?
Whole dried rose petals give a subtler flavour than ground. If grinding, use half the quantity.
Is advieh the same as baharat?

Storage and Reheating
Store covered at room temperature for up to 4 hours. Refrigerate for up to 3 days in a sealed container. Reheat with 1 tablespoon of water or stock over low heat, covered, for 8 minutes. The ghee in the rice prevents it from drying out as effectively as butter-based pilavs.
